Deeply aromatic and deliciously bittersweet, Lustau’s Vermut Rojo(red) brings the richness of aged Sherry to the aperitif glass. Dried apricot, ripe fruit and sticky toffee mingle with orange peel, toasted nuts and a gentle cocoa note, while sage and coriander lend fragrant, herbal lift. Beneath it all sits a subtle smoky wood character, adding a savoury depth that makes this much more than a simple sweet vermouth.

The palate is rounded and velvety, with generous sweetness balanced by citrus freshness and a carefully judged bitter edge. Nutty Amontillado flavours weave through the darker, richer fruit, lingering alongside orange zest and herbs on a long, appetising finish. Serve chilled over plenty of ice with a twist of orange for an effortlessly good aperitif, or bring its Sherry character to a Negroni. Already matured before bottling, it is ready to enjoy without further cellaring.

Pairs with: Anchovy-stuffed olives, salted Marcona almonds, jamón Ibérico, mature Manchego, chorizo croquettes, or a warm slice of tortilla española.

Lustau’s Vermut Rojo revives the Jerez tradition of making vermouth with mature Sherry. Its foundation is a partnership of dry, nutty Amontillado and sweet Pedro Ximénez, enriched with ten carefully selected botanicals. The wines give it depth and identity, while the herbs, spices and citrus provide its distinctive aperitif character.

This is a non-vintage bottling, shaped by the blending of wines matured through the traditional solera system. Its character comes from accumulated years of ageing and careful selection, with consistency and balance taking the place of a single harvest’s expression.

Bodegas Lustau began in 1896, when José Ruiz-Berdejo cultivated vines at his family estate near Jerez and made wines for larger Sherry houses. His daughter María later moved the business closer to the city, before her husband, Emilio Lustau, expanded it and began selling wines under the family’s own brands in 1945. Those modest beginnings developed into one of Jerez’s most respected names.

Lustau’s vineyards include Montegilillo, with its white albariza soils, and Las Cruces, where sand, clay and limestone combine nearer the coast. The region’s abundant sunshine and maritime influence shape the grapes, while its historic bodegas provide the conditions for slow maturation. Lustau works across Jerez de la Frontera, El Puerto de Santa María and Sanlúcar de Barrameda, exploring the different personalities of the Sherry triangle.

Cellar master Sergio Martínez oversees the wines and soleras, continuing a tradition of patient ageing and meticulous blending. Skilled coopers maintain the old casks, while the vermouth collection brings that cellar heritage into a fresh setting. Mature, characterful Sherry remains central to every recipe.

The wine base combines 80% Amontillado with 20% Pedro Ximénez. The Amontillado is made from Palomino and contributes dryness, savoury depth and nutty complexity, while the Pedro Ximénez supplies sweetness and a fuller texture. These are proportions of the base wines, before the botanical infusions are incorporated.

The two Sherries mature separately for around ten years through the traditional criaderas y solera system. This fractional blending process brings younger and older wines together gradually, developing complexity while maintaining a consistent house style.

Ten botanicals are infused separately before being blended with the wines. Key ingredients include wormwood, sage, coriander seeds and orange peel, combining bitterness, herbal fragrance, spice and citrus. Serve at 7–9°C over ice with orange peel to bring those layers into focus.
