Cognac

Cognac comes from a strictly defined area around the town of Cognac in south-west France, across the Charente and Charente-Maritime. The region is divided into six crus, ranked largely by their soil. At its heart, Grande Champagne and Petite Champagne sit on soft, chalky limestone that gives fine, floral spirits built for long ageing. In the surrounding crus, where clay takes over from chalk, the spirits are rounder and fruitier and mature sooner.

Almost all Cognac is made from Ugni Blanc, a grape that gives a light, crisp wine ideal for distilling. The wine is distilled twice in traditional copper Charentais pot stills, and the work must be finished by 31 March after the harvest. The new spirit then goes into French oak barrels, where it slowly takes on its colour and character. The age on the label refers to the youngest spirit in the blend: at least two years for VS, four for VSOP and ten for XO.

Picture a cold winter's night in the Charente, the stills glowing as the first spirit runs clear and fragrant. Years later, in a cool, quiet cellar, the cellar master draws a sample from an old cask, and the air fills with dried fruit, vanilla and spice. Pour a glass by the fire after a long dinner, and you can taste every one of those years.
