Deep amber in colour, with an extraordinary perfume of crème brûlée, dried fig, raisin and candied citrus peel. Almond biscuit, maple syrup and toffee follow, joined by the complex nutty character that comes only with extensive maturation.
Luxuriously sweet and richly textured, yet lifted by vibrant acidity that prevents the wine from ever feeling heavy. Layers of apricot, caramel, roasted nuts and dried fruit build towards a powerful, gently drying finish. Serve lightly chilled and pour in small measures. A little of this remarkable fortified wine goes a very long way.
For when: Dinner is finished, but nobody is ready to leave.
Pairs with: Sticky toffee pudding, dark chocolate truffles, vanilla ice cream, Christmas pudding, blue cheese or roasted almonds.
Dandelion Vineyards is the creation of winemaker Elena Brooks and her husband, Zar. Elena grew up around winemaking in Bulgaria, produced her first wine at just 16 and later gained experience around the world before settling in South Australia. The estate works with distinctive old vineyards across the Barossa and Eden Valleys, McLaren Vale, Adelaide Hills and Fleurieu Peninsula, combining historic vines with sensitive, hands-on winemaking.
Legacy of Australia comes from Pedro Ximénez vines averaging around 30 years old and continues a fortified-wine tradition begun by the Lindner family in 1944. The finished wine is hand-blended and bottled without fining or filtration, preserving the depth and complexity of its long maturation. Made from 100% Pedro Ximénez, it contains 186g/L residual sugar, balanced by 7.09g/L acidity. Alcohol: 18.5%.
