Plume Cognac, Frapin

Cognac, France

The Golden Quill

Profound, sumptuous and quietly commanding, Plume is a Cognac whose complexity reveals itself slowly. Deep amber with burnished orange reflections, it opens with dried apricot, fig and candied orange, followed by liquorice, tobacco leaf and the fragrant cedar character of a well-kept cigar box. With time in the glass, darker notes of prune, old wood and forest floor emerge, creating an aromatic depth that invites you to pause between each sip.

The palate is enveloping and remarkably rounded, with a silken texture carrying layers of preserved fruit and mellow oak. Its richness unfolds gradually, balanced by gently drying wood tannins and the savoury, nutty complexity known as rancio, developed through prolonged maturation. The finish is exceptionally persistent, leaving traces of candied fruit, tobacco and polished wood. Presented in an ornate decanter and gift box, this is a memorable gift for a serious Cognac lover, or a bottle to open when the occasion deserves something extraordinary. Fully matured before bottling, it is ready to savour without further cellaring.

For when: The occasion deserves a final glass that nobody will forget.

Pairs with: Dark chocolate truffles, walnut tart, tarte Tatin, roasted figs with mascarpone, prune and almond tart, or mature Comté.

Plume, meaning feather or quill, honours François Rabelais, the Renaissance writer and humanist whose mother was Anne-Catherine Frapin. The literary connection takes physical form in a decanter created by Orfèvrerie d’Anjou, with sculpted, gilded pewter feathers embracing the glass. Released in a limited series of 500 numbered decanters, it brings together the craftsmanship of the cellar and the decorative arts.

This is a non-vintage Cognac assembled from around twenty very old Grande Champagne eaux-de-vie. Drawn from Frapin’s treasured Paradis reserves, its character reflects several decades of patient maturation and the work of successive generations, with blending bringing those individual histories into harmony.

The Frapin family’s roots in the Charente stretch back to 1270, when they settled near Segonzac as winegrowers. Centuries of family stewardship have built a house with an unusually close relationship between vineyard and cellar, centred on Château Fontpinot in the heart of Grande Champagne.

The estate comprises 240 hectares of vines, all within Grande Champagne, Cognac’s Premier Cru. Chalk and limestone soils, hillside exposure and the region’s Atlantic influence provide the setting for Ugni Blanc, whose naturally fresh, low-alcohol wines are well suited to distillation. Every Frapin Cognac comes exclusively from grapes grown on the family estate.

Cellar master Patrice Piveteau oversees a tradition built around distillation on the lees, careful use of oak and long maturation. Different cellar conditions allow the house to develop contrasting textures and aromatic profiles before blending. That control, from growing the grapes to selecting the final eaux-de-vie, gives Frapin its distinctive combination of richness, finesse and continuity.

Plume is made from estate-grown Ugni Blanc, with all its eaux-de-vie originating in Grande Champagne. The grapes are pressed and the juice fermented in tanks to produce the fresh, acidic base wine required for distillation. The finished Cognac brings together around twenty eaux-de-vie selected from the house’s oldest reserves.

Following Frapin’s traditional method, the wines undergo double distillation on their lees in Charentais copper pot stills. The distillers judge their selections through tasting, retaining the heart of the spirit for maturation. Keeping the lees during distillation contributes to the depth and aromatic richness that develop over time.

Frapin matures its Cognacs in French Limousin oak, progressing from younger barrels to older vessels as the spirit evolves. Plume’s components have spent several decades in century-old barrels in the humid Pierre Frapin Paradis cellar, conditions that encourage roundness and a mellow texture. Careful blending preserves the individuality of these precious reserves while bringing their fruit, wood and mature savoury character into balance.
