Fino de Jerez 3 en Rama, 2026 Release , Bodegas Lustau

Released just once a year, these Lustau sherries are bottled 'En Rama' – raw and unfiltered – directly from the cask. Cellar master Sergio Martínez uses his 14 years of expertise to select only the finest biologically aged casks, waiting until April, when the humid winter and wet spring allow the 'flor' yeast to reach its peak thickness. This uncompromising approach ensures the sherry is captured at its absolute best, offering an authentic experience akin to tasting directly from the cask in Lustau’s historic bodegas.

Lustau is the only producer operating across all three towns of the Sherry triangle: Jerez, El Puerto de Santa Maria, and Sanlúcar de Barrameda. This allows them to release a unique trio of En Rama sherries – Fino de Jerez, Fino del Puerto, and Manzanilla de Sanlúcar – highlighting the distinct microclimates of each area. While best enjoyed fresh to appreciate their salty delicacy, these wines can be kept for months as they evolve into nuttier flavours.

The Fino de Jerez 3 en Rama is deep gold with amber highlights; this is the broadest and most structured of Lustau’s three 2026 en rama releases. Aromas of fresh yeast, warm white bread and toasted almond are layered with chalk, dried herbs and a subtle buttery richness.

The palate is very dry and gently saline, with more body and roundness than the coastal expressions from El Puerto and Sanlúcar. Mineral tension keeps everything precise, while almond, bread crust and savoury flor notes linger through the delicate, nutty finish. Unfiltered and full of character, this is serious yet brilliantly drinkable Sherry.

Jerez de la Frontera lies furthest inland within the Sherry Triangle. Its hotter summers and lower humidity produce a thinner layer of flor than in the coastal towns, giving its Finos greater body, structure and nutty depth. This 2026 release captures that distinctive Jerez personality with exceptional clarity.

Lustau began in 1896 when José Ruiz-Berdejo started making wine from his family’s vineyards and selling it to larger Sherry houses as an almacenista. His daughter, María Ruiz-Berdejo Alberti, moved the family soleras into Jerez in 1931, while her husband, Emilio Lustau Ortega, later gave the house its name and began bottling wines under its own labels.

Now part of the family-owned Luis Caballero group, Lustau remains one of Sherry’s most innovative and trusted producers. Its principal wines mature in six restored 19th-century bodegas in central Jerez, where cathedral-like ceilings and traditional albero floors help regulate temperature and humidity naturally.

Lustau is unique in maintaining and releasing wines from all three towns of the Sherry Triangle: Jerez de la Frontera, El Puerto de Santa María and Sanlúcar de Barrameda. This allows the house to show how local climate shapes biologically aged Sherry with unusual clarity. Cellar master Sergio Martínez oversees the soleras and selects the individual casks for the annual 3 en Rama releases. His deep knowledge of flor ageing and the house’s extensive stocks gives customers confidence that every bottle combines authenticity with exceptional precision.

Made from 100% Palomino, this Fino spent an average of four years ageing biologically beneath flor in American oak casks in Jerez de la Frontera. The city’s inland climate, with very hot summers and mild but wet winters, produces a more rounded and structured style than the wines aged closer to the Atlantic.

The winter preceding the 2026 release was wetter and more variable than usual. Flor developed progressively and steadily in Jerez, helping the wine retain a balance between sharp, penetrating aromas and greater depth. Cellar master Sergio Martínez selected the finest casks in April, when the spring flor was approaching its peak.

The wine was drawn directly from its solera and bottled without filtration or additional treatment. This preserves the natural colour, texture and intensity created during biological ageing. The winter of 2026 developed with a wetter and more variable pattern compared to the average of previous years. In El Puerto, yeast activity showed a more regular development, supported by higher ambient humidity and mild temperature conditions. The recurring rainfall in February and March encouraged the consolidation of a balanced and active flor veil, allowing for continuous biological interaction. In Jerez, the evolution of the flor was progressive and steady throughout the winter, enabling finos to retain their characteristic balance between sharp, penetrating notes and structured depth. Meanwhile, in Sanlúcar, high humidity levels and maritime influence fostered a more persistent and uniform flor, reflected in manzanilla wines with enhanced freshness and impeccable balance.
