2025 Sauvignon Blanc 'Sibaris' Gran Reserva , Undurraga

Leyda Valley, Chile

Pacific Zest

This is Chilean Sauvignon Blanc with coastal freshness and a clean, mineral snap. Grapefruit, lime and green apple lead the nose, lifted by white flowers, fresh herbs, white pepper and a cool stony edge. It has the citrus brightness Sauvignon drinkers love, but the Leyda Valley influence gives it extra restraint, tension and elegance.

On the palate, it is crisp, dry and lively, with juicy citrus fruit, bright acidity and a fresh, persistent finish. The fruit feels pure and precise rather than tropical, while the mineral and herb notes keep it smart and food-friendly. A brilliant bottle for anyone who wants a fresher alternative to New Zealand Sauvignon, with Chilean coastline, clarity and value in the glass.

For when
A seafood supper needs a bright coastal white.

Pairs with
Grilled prawns, oysters, ceviche, crab salad, sea bass, sushi, goat’s cheese, asparagus, herb salads or lemon roast chicken.

Undurraga’s Sibaris Gran Reserva range is made to show clear varietal character with a little extra polish. This Sauvignon Blanc comes from the Lomas de Leyda estate, where Pacific breezes and morning coastal fog slow ripening and help preserve aromatic freshness. The result is a crisp, modern Chilean white with citrus drive, mineral detail and excellent seafood appeal.

Undurraga is one of Chile’s historic wine names, founded in 1885 and based in Talagante in the Maipo Valley. Over more than a century, the estate has grown from a pioneering Chilean producer into a broad, respected winery with vineyards across several of the country’s key wine regions.

Its strength lies in combining long-established heritage with a modern understanding of Chile’s varied climates and soils. The winery works with fruit from areas including Maipo, Leyda, Maule, Colchagua and Cauquenes, allowing each grape variety to be matched to the place where it performs best.

The Sibaris Gran Reserva range is a polished step up, focused on expressive, well-made wines with clear regional identity. For Sauvignon Blanc, that means Leyda Valley: one of Chile’s best cool-climate zones for fresh, citrus-led whites.

The 2025 Sauvignon Blanc 'Sibaris' Gran Reserva is 100% Sauvignon Blanc from Undurraga’s Lomas de Leyda estate in the Leyda Valley. The vineyard soils are low in fertility, with a thin loamy clay top layer over cracked clay and decomposed granite, helping give the wine its fresh mineral edge.

The Leyda Valley is strongly influenced by the nearby Pacific Ocean. Summer coastal fog often lasts until midday, slowing ripening and helping the grapes develop intense citrus, herbal and floral aromas while retaining vibrant acidity. Rainfall is low, averaging around 250mm, so the fruit develops cleanly and with good concentration.

The grapes are hand-harvested into 500kg bins, selected, then sent directly to pneumatic presses. A short 4 to 6 hour maceration before pressing helps build aroma and flavour, while fermentation in stainless steel at 13 to 15°C keeps the style crisp and pure. The finished wine is bottled young, giving a bright, refreshing Sauvignon Blanc with grapefruit, lime, white pepper, herbs and a clean mineral finish. It is made for drinking now, especially with seafood, salads and lighter dishes.
