2025 Pet Nat Miao Rose, Vina Echeverria
Curicó Valley, Chile
Playful, cloudy and full of natural charm, the 2025 Miao Rosé is the kind of bottle that brings instant energy to the table. Made from Chardonnay with a splash of Cabernet Franc, it opens with smoky orchard fruit, citrus peel and wild herbs, followed by hints of lychee, tangerine and orange blossom. The bubbles are soft and easy rather than formal, giving the wine a fresh, gently frothy feel that suits its offbeat personality perfectly. Bright, fruity and lightly textured, it balances natural-wine character with pure drinkability.
The palate is zippy and refreshing, with coral-pink colour, a little haziness from its low-intervention style and a dry, mouthwatering finish. There’s a lovely contrast between ripe fruit and savoury lift, making it feel fun without being frivolous. Think of it as Chilean sunshine with a wild little sparkle, relaxed, expressive and absolutely made for opening with friends.
For when: the music is on, snacks are out, and nobody wants anything too serious.
Pairs with: spicy tuna onigiri, grilled halloumi, seafood tacos, kimchi toasties or salty crisps.
Viña Echeverría is a family-owned estate in Chile’s Curicó Valley, known for combining sustainable farming with a willingness to experiment beyond the classic Chilean playbook. Miao is part of that more playful, low-intervention side of the winery, made as a pét-nat, where fermentation finishes in bottle to create a naturally sparkling wine. The result is unfiltered, gently cloudy and full of character, with the Chardonnay bringing orchard-fruit brightness and the Cabernet Franc adding colour, lift and a subtle savoury twist.
