2025 Organic Primitivo, Trastullo

Puglia, Italy

Velvet Mischief

Generous, dark-fruited and full of southern Italian warmth, this organic Primitivo wraps ripe blackberry, black cherry and juicy plum in soft folds of spice. A touch of dried fruit adds depth, while hints of vanilla and dark chocolate bring a gently indulgent edge. There is plenty of richness here, but the vibrant berry character keeps everything inviting, with the fruit taking centre stage.

Full-bodied and rounded, the palate delivers a lovely cushion of dark fruit, supported by supple tannins and gentle acidity. Its smooth texture makes it immediately approachable, while lingering cherry and spice give the finish a satisfying warmth. This is a red for generous cooking and unhurried evenings, with enough substance for a slow-cooked supper and all the charm needed to enjoy it young, without waiting for a special occasion.

For when: The pasta is bubbling, the candles are lit, and nobody is watching the clock.

Pairs with: Serve with slow-cooked beef ragù and pappardelle, fennel sausage lasagne, rosemary-roasted lamb shoulder, aubergine parmigiana, grilled rib-eye steak or aged Pecorino.

From Puglia, the sun-drenched heel of Italy, this wine gains an extra layer of richness through an unusual two-stage harvest. Some grapes stay on the vine longer, and their skins are subsequently used to enrich the wine from the earlier picking, bringing together fresh berry flavour and deeper, riper fruit.

Trastullo is a contemporary Italian wine range with a playful identity rooted in the country’s theatrical heritage. Its name recalls a character from Commedia dell’Arte, the colourful tradition of masked performance, and is also an old Italian word associated with amusement and pleasure. The label’s inspiration comes from the theatrical etchings of Jacques Callot, giving the bottles a distinctive connection to the art and exuberance of early seventeenth-century Italy.

For its organic Primitivo, Trastullo turns to Puglia, where a warm Mediterranean climate encourages the generous dark fruit and rounded texture that make the grape so appealing. The approach combines organically grown grapes with considered cellar work, using staggered picking and a short period in barrel to build depth while preserving an accessible, fruit-led style.

Made from organically grown Primitivo with Sangiovese from Puglia, the wine draws on two stages of harvesting. The first portion is picked and destemmed, while the remaining grapes stay on the vines for approximately another ten days to develop greater ripeness.

The initial parcel undergoes seven to eight days of maceration to extract colour and structure, with fermentation in stainless steel at a controlled temperature of 25–27°C. The later-picked grapes are vinified separately using conventional red winemaking. The wine from the first harvest then undergoes a second fermentation on the pomace, or grape skins, from the later harvest, adding depth and concentration.

Maturation takes place in barrel for three to six months, rounding out the texture and complementing the dark fruit with gentle spice. The resulting style is supple and approachable, with its principal appeal in the generous fruit and smooth texture of youth.
