Deeply fruity and warmly inviting, Talò opens with Morello cherry, ripe blackberry and dark plum, layered with vanilla, cocoa and a gentle suggestion of Mediterranean herbs. French oak brings a mellow thread of spice, adding depth to the generous fruit without overwhelming its character.

Full-bodied and supple, the palate wraps its dark berry flavours in soft tannins, with enough freshness to keep each mouthful lively. Cherry and warm spice linger through the rounded finish, giving this southern Italian red an immediately satisfying appeal. Enjoy it young for its abundant fruit, or allow a few years in the cellar for a mellower, more savoury character to emerge.

For when: The pasta is homemade, the portions are generous and nobody is watching the clock.

Pairs with: Orecchiette with beef ragù, Puglian bombette pork rolls, rosemary-roasted lamb shoulder, aubergine parmigiana, fennel-scented porchetta or mature pecorino.

Talò takes its name from a local family surname, honouring the growers who tend San Marzano’s vineyards with the care they would give their own gardens. Traditionally blended with Negroamaro, Malvasia Nera takes centre stage here, revealing its generous fruit and naturally inviting character in a wine rooted in the warmth of Salento.

San Marzano was founded in 1962 when 19 growers joined together in San Marzano di San Giuseppe, a village in the heart of Puglia’s Primitivo di Manduria country. The cooperative developed around a shared commitment to local vineyards and indigenous grapes, opening its own bottling plant in 1996 as it began bringing its wines to a wider audience.
Its vineyards lie in a landscape shaped by Mediterranean sunshine and the influence of the Ionian and Adriatic seas. Hot, dry summers encourage generous ripeness, while differences in soil and vineyard position contribute individual character to the wines. Native varieties, particularly Primitivo, Negroamaro and Malvasia Nera, remain central to the range.
San Marzano combines this regional heritage with modern cellar techniques and carefully judged maturation. Preserving established vineyards and giving local grapes a distinct identity have been important themes in its development. The Talò range captures that approach in accessible, characterful wines made for the table.

Made entirely from Malvasia Nera di Brindisi, Talò comes from vineyards around San Marzano di San Giuseppe in the province of Taranto. The vines grow at approximately 100 metres above sea level on shallow, predominantly clay soils with a substantial rocky component. Harvest takes place during the second half of September.
Maceration and alcoholic fermentation last approximately ten days under controlled temperatures, using selected yeasts. This develops the wine’s deep colour and ripe fruit character while shaping its approachable structure.
The wine matures for four to six months in French oak barriques. This relatively brief period in wood brings gentle spice and additional roundness, complementing the grape’s generous fruit. It is ready to enjoy young, with the capacity to develop over several years.
