San Silvestro’s 2025 Fossili is classic Gavi di Gavi: crisp, dry and brilliantly refreshing, but with enough mineral bite to feel properly grown-up. Made from Cortese cultivated on the hills around Gavi, it opens with lemon, green apple, white flowers and a touch of grapefruit zest, followed by a gentle hint of spice and bitter almond.

On the palate, it is bright, clean and mouth-watering, with citrus freshness, orchard fruit and a cool stony line through the finish. The name Fossili feels perfectly judged, pointing to the marl and fossil-rich soils that give the wine its mineral tension. A smart Italian white for anyone who likes Pinot Grigio’s freshness, but wants more precision and character.

San Silvestro is a long-established Piedmontese producer based in the commune of Novello, in the Langhe. Founded by Giovanni Sartirano, the winery has passed through four generations and is now run by cousins Paolo and Guido Sartirano. Its identity is deeply tied to Piedmont’s traditional grapes, with wines made from Cortese, Arneis, Barbera, Dolcetto, Nebbiolo, Moscato and other local varieties.

The estate combines regional heritage with a modern, accessible style, producing wines that feel clean, expressive and reliably well made. San Silvestro is also connected to a broader sustainability ethos, with Equalitas certification across its sustainably cultivated vineyards. That matters here because Gavi is all about clarity: good vineyard work, healthy Cortese fruit and careful handling in the cellar are what allow the grape’s citrus, almond and mineral notes to shine.

Fossili is a strong example of the house style. It is bright, precise and quietly characterful, offering proper Gavi del Comune di Gavi freshness without fuss or heaviness.

Fossili is made from 100% Cortese grown in the Gavi del Comune di Gavi DOCG, the most specific designation within the wider Gavi appellation. The grapes are cultivated on hillsides around the village of Gavi, not far from the Ligurian Sea, where maritime influence helps preserve freshness and aromatic lift. The soils are rich in marl and fossils, giving the wine its name and its cool mineral edge.

The grapes are softly pressed, then fermented in stainless steel at a controlled temperature, usually around 18 to 20°C. The wine is then matured on fine fermentation lees for around six months, adding subtle texture and length while keeping the profile crisp, dry and citrus-led. The style is unoaked, allowing Cortese’s green apple, lemon, floral notes and bitter almond finish to remain clear.

The 2025 Gavi vintage is regarded as balanced and high quality, with spring rainfall building water reserves, a warm but well-ventilated summer supporting steady ripening, and cool nights helping preserve acidity and aromatic definition.
