The Green Heart of Chianti

Deep green and wonderfully fragrant, with fresh olive, artichoke and aromatic herbs at its core. The palate is vivid and beautifully balanced, combining gentle bitterness with a clean, peppery warmth and lingering herbal freshness.

This is an expressive Tuscan finishing oil with enough intensity to lift simple ingredients without overwhelming them. Its freshness and savoury depth make it equally at home drizzled over warm bread, vegetables, grilled meat or a bowl of rustic soup.

The Manetti family has owned Fontodi since 1968, although its roots in Chianti stretch back centuries. The family’s original craft was producing the region’s celebrated terracotta, and that same precision and respect for local materials have shaped Fontodi into one of Chianti Classico’s most admired agricultural estates.

Alongside its vineyards, Fontodi tends approximately 10,000 olive trees across several plots in the Conca d’Oro, the natural amphitheatre surrounding Panzano. The organically farmed groves lie between 400 and 500 metres above sea level, predominantly on marl soils. The 2025 oil combines 70% Correggiolo, 25% Moraiolo and 5% traditional pollinating varieties.

The olives are harvested by hand and pressed on the same day to retain their fragrance and freshness. Modern stainless-steel continuous presses protect the olive paste and finished oil from oxidation. After a short period in stainless steel, the oil is gently filtered through cotton and bottled early to preserve its deep colour and vibrant fruit.
