Lime zest, grapefruit and crisp Granny Smith rise from the glass, joined by white blossom, mirabelle plum, yellow peach and a subtle flinty note. The fruit feels bright and beautifully defined, with just enough ripeness to soften the wine’s cool, mineral character.

La Princée is Olivier Lamy’s portrait of Saint-Aubin rather than a single-vineyard wine, bringing together Chardonnay from ten parcels with different exposures around the village. Some are warmer and more sheltered, while others sit in cooler positions, creating a natural balance between fruit, texture and tension. The stony clay-limestone soils give the wine its distinctive mineral drive, while careful farming and patient cellar work preserve purity and freshness.

About the 2024 Vintage in Burgundy

The 2024 growing season was one of Burgundy’s most demanding in recent years. Rain, frost, hail and intense mildew pressure greatly reduced the crop, requiring relentless work in the vineyards and rigorous selection at harvest. Warmer, drier conditions during August and September finally allowed the remaining grapes to ripen slowly and evenly.

Quantities are limited, but the best white wines are beautifully balanced and refined. Lower alcohol, bright acidity and pure citrus fruit give the vintage a cool, classical character. In Saint-Aubin, the elevated limestone slopes produced Chardonnay with particular clarity, energy and mineral definition.

Domaine Hubert Lamy is one of the defining estates of modern Saint-Aubin. The Lamy family has cultivated vines in the village since 1640, while the present domaine was established by Hubert Lamy in 1973. Today it is run by his son Olivier and Olivier’s wife, Karine, farming 18.5 hectares across Saint-Aubin, Puligny-Montrachet, Chassagne-Montrachet and Santenay.

Olivier has earned an international reputation for bringing extraordinary precision and energy to Saint-Aubin. His approach begins in the vineyard, with massal selections, high planting densities, tall canopies, careful soil cultivation and meticulous manual work. Chardonnay accounts for around 80% of the domaine’s production and is particularly well suited to Saint-Aubin’s cool, limestone-rich slopes.

In the cellar, each parcel is vinified and matured separately to preserve its individual character. Natural fermentations, extended ageing and little or no new oak allow the wines to develop texture without losing their purity. The resulting whites are finely structured, mineral and remarkably long-lived, placing Domaine Hubert Lamy among the most sought-after producers in the Côte de Beaune.

The 2024 La Princée is made from 100% Chardonnay drawn from ten parcels around Saint-Aubin. The combination of warmer and cooler sites, varied exposures and stony clay-limestone soils gives the finished wine both depth and tension.

The grapes were harvested by hand in small containers, then slowly pressed in a pneumatic press. After light settling, the juice was transferred to barrels and larger demi-muids for a long fermentation with indigenous yeasts. The domaine’s cool cellar allows fermentation to proceed gradually, building texture while preserving freshness and aromatic detail.

Each parcel was vinified and matured separately, with little or no new oak used. The wine underwent an extended élevage before bottling, allowing its citrus fruit, fine texture and limestone character to come together without sacrificing energy.
