Bright, lifted and beautifully focused, En Remilly opens with white flowers, acacia and fresh citrus, layered with crisp pear, dried fruit and a distinctive flinty edge. The aromatics feel delicate and precise, with subtle oak adding texture without softening the wine’s cool mineral character.

The palate is dense yet wonderfully energetic, combining lemon and lime with a taut line of acidity and finely chiselled structure. There is real substance beneath the freshness, carried through to a long, chalky and gently saline finish. Elegant, incisive and alive with tension, this is one of Saint-Aubin’s most compelling Premier Cru expressions.

For when: You want white Burgundy to feel positively electric.

Pairs with: Scallop carpaccio with citrus, grilled langoustines, roast turbot, trout with almonds, chicken with tarragon or fresh goat’s cheese.

En Remilly occupies a high, windswept slope at the southern end of Saint-Aubin, close to the celebrated vineyards of Montrachet and Chevalier-Montrachet. Exposed white limestone and an elevation of 250 to 300 metres give the wine its characteristic flinty minerality, freshness and drive. Once devastated by phylloxera, this historic vineyard was returned to cultivation during the 1970s and is now regarded as one of Saint-Aubin’s finest sites.

Maison Olivier Leflaive was founded in Puligny-Montrachet in 1984, drawing upon a family winemaking history that stretches back through generations. Olivier established the house with the aim of producing wines that faithfully express Burgundy’s individual villages and vineyards, working with both estate-owned parcels and carefully selected growers.

The house has developed an exceptional portfolio across the Côte de Beaune, with particular strength in Puligny-Montrachet, Chassagne-Montrachet, Meursault and Saint-Aubin. Grapes are harvested according to the maturity of each individual site, with every parcel vinified separately so that its character can be preserved throughout fermentation and maturation.

Today, technical director Solène Panigai and oenologist Philippe Grillet oversee production. Their approach combines traditional Burgundian methods with precise, parcel-by-parcel decisions, producing white wines recognised for their freshness, textural clarity and carefully judged use of oak.

The Chardonnay comes from sustainably cultivated vines averaging approximately 26 years old, planted on calcareous clay soils between 250 and 300 metres above sea level. The grapes were harvested entirely by hand, pressed as whole bunches and allowed to settle for 24 hours before fermentation.

Alcoholic and malolactic fermentations took place in French oak barrels. The wine was matured for 12 months in total, spending approximately eight months in barrel, 15% of which was new oak, followed by four months in stainless steel. This restrained élevage develops texture and depth while preserving En Remilly’s white-flower aromatics, citrus freshness and flinty mineral tension.

100% Chardonnay. Alcohol: 13%. Vine age: approximately 26 years. Élevage: approximately eight months in French oak barrels, 15% new, followed by four months in stainless steel. Recommended drinking: 2025 to 2031. Serve at 10 to 12°C.
