Initially restrained, this opens gradually to reveal lime zest, lemon blossom, crisp pear and white peach, layered with crushed oyster shell, gunflint and cool white stone. Everything feels finely drawn and precise, with the fruit emerging slowly rather than announcing itself all at once.

The palate is taut, concentrated and beautifully controlled. Citrus and orchard fruit build through the centre, supported by vivid acidity, a fine creamy texture and a powerful limestone backbone. The finish is long, mouth-watering and intensely mineral, leaving traces of lemon oil, chalk and struck flint. Serious white Burgundy with the depth to age, but an irresistible current of freshness running throughout.

For when: The bottle needs to be every bit as precise as the cooking.

Pairs with: Seared scallops, grilled lobster, turbot with beurre blanc, roast guinea fowl, asparagus risotto or aged Comté.

En Remilly is one of Saint-Aubin’s most celebrated Premier Cru vineyards, occupying a steep, south-facing slope immediately above Le Montrachet and beside Chevalier-Montrachet. Domaine Hubert Lamy’s 2.02-hectare parcel was largely planted in 1989 and lies on shallow, hard limestone soils. The site combines generous sunlight with a cool, elevated position, producing Chardonnay with both concentration and extraordinary mineral tension. In Olivier Lamy’s hands, it regularly approaches the precision and complexity of neighbouring Premier Cru Puligny-Montrachet.

About the 2024 Vintage in Burgundy

The 2024 growing season was one of Burgundy’s most demanding in recent years. Rain, frost, hail and intense mildew pressure greatly reduced the crop, requiring relentless vineyard work and rigorous selection at harvest. Warmer, drier conditions during August and September finally allowed the remaining grapes to ripen slowly and evenly.

Quantities are extremely limited, but the best white wines are beautifully balanced and refined. Lower alcohol, bright acidity and pure citrus fruit give the vintage a cool, classical character. On the limestone slopes of Saint-Aubin, Chardonnay developed exceptional clarity, energy and mineral definition.

Domaine Hubert Lamy is one of the defining estates of modern Saint-Aubin. The Lamy family has cultivated vines in the village since 1640, while the present domaine was established by Hubert Lamy in 1973. Today it is run by his son Olivier and Olivier’s wife, Karine, farming 18.5 hectares across Saint-Aubin, Puligny-Montrachet, Chassagne-Montrachet and Santenay.

Olivier has earned an international reputation for bringing extraordinary precision and energy to Saint-Aubin. His approach begins in the vineyard, with massal selections, high planting densities, tall canopies, careful soil cultivation and meticulous manual work. Chardonnay accounts for around 80% of the domaine’s production and is particularly well suited to Saint-Aubin’s cool, limestone-rich slopes.

In the cellar, each parcel is vinified and matured separately to preserve its individual character. Natural fermentations, extended lees ageing and little or no new oak allow the wines to develop texture without losing their purity. The resulting whites are finely structured, mineral and remarkably long-lived, placing Domaine Hubert Lamy among the most sought-after producers in the Côte de Beaune.

The 2024 En Remilly is made from 100% Chardonnay grown on Domaine Hubert Lamy’s 2.02-hectare parcel. The vines were largely planted in 1989 on a steep, south-facing slope with shallow, limestone-rich soils, close to the celebrated vineyards of Puligny-Montrachet.

The grapes were harvested by hand, crushed and slowly pressed before the juice was lightly settled. Fermentation began naturally with indigenous yeasts in 300 and 600-litre barrels, the great majority of which were seasoned rather than new. The domaine’s cool cellar encourages a long, gradual fermentation that preserves freshness while building texture.

The wine remained on its lees for approximately 24 months in barrel, followed by a further period in tank before bottling. Sulphur additions were kept low and introduced only during maturation, while fining and filtration were used only if necessary.
