Elegant, finely drawn and wonderfully aromatic, Les Levrons opens with white peach, pear and lemon blossom, layered with citrus peel, fresh almond and a delicate hint of cream. Subtle notes of pineapple, lemongrass and struck stone bring further complexity while preserving the wine’s characteristic Puligny purity.

The palate is silky yet precise, with ripe white fruit carried by vibrant acidity and a cool mineral backbone. Fine oak adds texture and gentle spice without softening its clean, linear shape. Graceful, concentrated and beautifully controlled, it finishes long and saline with lingering citrus, white flowers and chalk.

For when: Only something polished, precise and quietly luxurious will do.

Pairs with: Langoustines, scallops, Dover sole, grilled turbot, roast chicken, creamy seafood dishes or young Comté.

Les Levrons is a small village-level vineyard situated on the northern side of Puligny-Montrachet. Domaine Patrick Javillier farms just 0.18 hectares of Chardonnay here, planted with vines around 30 years old. Clay-rich soils contribute texture and depth, while Puligny’s natural mineral character brings elegance, freshness and definition.

Domaine Patrick Javillier is a family-run estate based in Meursault, with approximately 11 hectares of vineyards spread across five communes of the Côte de Beaune. The domaine’s modern story began in 1945, when Raymond Javillier returned from the war and took responsibility for two hectares of family vines. His son Patrick joined after completing his national diploma in oenology and oversaw his first harvest in 1974.

Patrick gradually expanded the estate through the 1980s and early 1990s, building an impressive collection of parcels in Meursault, Puligny-Montrachet, Savigny-lès-Beaune, Aloxe-Corton and Pernand-Vergelesses. Chardonnay remains at the heart of the domaine, with its wines admired for combining texture and generosity with freshness, precision and clearly defined vineyard character.

The next generation now plays a central role. Patrick’s daughter Marion oversees the red wines and commercial side of the domaine, while Pierre-Emmanuel Lamy manages the vineyards and white-wine production. Their thoughtful approach to élevage and detailed treatment of individual parcels allow each appellation to retain its own distinctive personality.

The 2024 Les Levrons is made entirely from Chardonnay grown in the domaine’s small Puligny-Montrachet parcel. The grapes were harvested by hand, carefully sorted and gently pressed before the juice was settled and transferred to barrel.

Alcoholic fermentation took place with indigenous yeasts and was followed by malolactic fermentation. The wine matured in a combination of new and previously used oak barrels, with the proportion of new wood carefully judged to support the fruit without obscuring the vineyard’s floral and mineral character.

Élevage lasted approximately 16 to 18 months on the fine lees, with bâtonnage used selectively according to the development of the vintage. The wine was bottled at the domaine with minimal fining and filtration.
