Pure, restrained and beautifully defined, this Puligny-Montrachet opens with lemon zest, grapefruit and crisp green apple, layered with hawthorn, acacia and a delicate touch of lime blossom. The oak remains discreet, allowing the citrus fruit and cool limestone character to take centre stage.

Sleek and finely structured, the palate favours precision and energy over weight. Orchard fruit and citrus are carried by bright acidity and a vertical mineral backbone, with subtle texture developing through the middle. The finish is long, taut and refreshing, leaving notes of grapefruit, wet stone and finely judged oak. A classical Puligny with the clarity and balance to age gracefully.

Pairs with: Lobster, grilled langoustines, turbot or sole with beurre blanc, roast chicken with wild mushrooms or mature Comté.

The wine is assembled from seven village lieux-dits covering 2.71 hectares, all owned and cultivated by the domaine. The vines average approximately 40 years of age and grow in Puligny’s fractured limestone and fine clay soils. Bringing several sites together creates a complete expression of the village, combining citrus freshness, elegant texture and a distinctly mineral core.

The Carillon family has cultivated vines in Puligny-Montrachet for more than five centuries, with records naming Jehan Carillon as a village winegrower in 1520. Jacques joined his father Louis and brother François at the family estate after completing his winemaking studies in Beaune, helping to continue its reputation for classical, long-lived white Burgundy.

Domaine Jacques Carillon was created in 2010 when the historic family property was divided between Jacques and François. Jacques and his wife Sylvia now farm approximately five hectares, almost entirely situated within Puligny-Montrachet. The domaine’s holdings include village vineyards, the Premier Crus Les Referts, Les Perrières and Les Champs Canet, and a small parcel of Bienvenues-Bâtard-Montrachet Grand Cru.

All the wines come exclusively from estate-owned vineyards. Viticulture is thoughtful and restrained, with controlled yields and harvesting carried out by hand. In the cellar, each wine follows a similar, traditional approach so that differences in character come from the vineyard rather than the winemaking. The resulting wines are linear, understated and intensely mineral, often revealing their greatest complexity after several years in bottle.

The Chardonnay was hand-harvested from seven village lieux-dits, with the vines averaging approximately 40 years old. After gentle pressing, the juice was allowed to settle before alcoholic and malolactic fermentations took place in French oak barrels.

The wine remained on its fine lees in barrel for 12 months, with approximately 20% new oak, before spending a further six months in stainless steel. This extended élevage builds texture and cohesion without obscuring the fruit or limestone-driven character. A light filtration was carried out before bottling.
