White lily, jasmine and lemon blossom rise from the glass, followed by Granny Smith apple, pure lime and a subtle hint of ginger. Beneath the fruit lies a striking mineral character of chalk, wet stone and ancient slate.
Dry, powerful and tightly coiled, the palate drives forward with crystalline acidity and concentrated citrus fruit. Fine chalky texture, saline freshness and a gentle pithy grip give the wine extraordinary definition. The finish is precise, persistent and seemingly endless. Thrilling now, but this is a genuine cellar wine with decades of development ahead.

Polish Hill comes from one of Australia’s most distinctive Riesling vineyards. Its low-fertility soils combine silt, shallow shale, clay and gravel over ancient blue slate. The struggling vines produce small berries with exceptional intensity, creating a wine renowned for its power, precision and longevity.
