Wild Cherry Velvet

Fragrant, supple and quietly compelling, Low Burn brings together Central Otago’s vivid fruit and a wonderfully savoury sense of depth. Wild cherry and fresh summer berries rise from the glass, lifted by delicate floral notes and dried herbs. As it opens, darker fruit, forest floor and a subtle gamey character emerge, with gentle baking spice and a discreet oak influence adding warmth. There is an appealing wildness beneath the polished surface, giving every glass something new to explore.

The palate is silky and concentrated, with juicy cherry and berry flavours carried by fresh acidity and dense, finely textured tannins. A chalky, almost saline edge brings definition to the fruit, while earthy, savoury notes linger through the long finish. Medium-bodied yet full of flavour, it offers the immediate pleasure of beautifully ripe Pinot alongside enough structure to reward a few years in the cellar. An excellent choice for a dinner where the wine deserves as much attention as the food.

Pairs with: Pair with pan-roasted duck breast and cherry jus, mushroom and thyme pithivier, roast guinea fowl with pancetta, venison loin with beetroot, grilled salmon with lentils, or a wedge of aged Gruyère.

Named after the stream running through the property, Low Burn comes from Pyramid Valley’s estate in Central Otago’s Lowburn sub-region. The sheltered site combines original vines planted in 2000 with newer, closely spaced plantings established between 2018 and 2020. Its loess and deep silt soils, containing naturally formed lime deposits, provide a distinctive setting for this expressive Pinot Noir.

Pyramid Valley was founded in 2000 by Mike and Claudia Weersing, whose search for an exceptional vineyard site led them to Waikari in North Canterbury. Their admiration for Burgundy informed the planting of Pinot Noir and Chardonnay, while biodynamic farming shaped the estate from the beginning. Brian Sheth and Steve Smith MW acquired the property in 2017, continuing its commitment to wines with individual character and a close connection to their vineyards.

The original Waikari estate is defined by limestone, clay and marl soils in a cool hillside setting. Low Burn, added in 2018, brought a contrasting Central Otago landscape into the family. Sheltered slopes and deep, calcium-rich soils offer a different expression of Pinot Noir, with the estate’s long history of cultivation contributing to its soil character.

Winemaker and estate manager Huw Kinch works alongside viticulturist Nick Paulin, combining thoughtful farming with gentle cellar practices. Both estate vineyards are certified organic by BioGro New Zealand and farmed according to biodynamic principles. Regenerative cultivation, indigenous yeasts and patient maturation support an approach that values texture, freshness and the distinctive qualities of each site.

Made from 100% Pinot Noir grown at the organically farmed Low Burn estate. The vineyard includes Abel, 828, 943, 115 and 777 clones, planted on loess over deep silts with naturally occurring lime deposits. Grapes were harvested between 4 and 16 April 2024.

Fermentation took place with indigenous yeasts, with the wine spending 21–28 days on its skins. The cap was kept moist daily, with hand plunging during the most active stage of fermentation to build colour, flavour and structure.

The wine matured for 12 months in French oak, followed by a further six months settling in concrete and barrels. It was bottled unfined and unfiltered under screwcap, preserving its texture and aromatic detail.

Alcohol: 13.5%. Made from certified organic grapes. Recommended drinking window: 2026–2030.
