White flowers, green apple and ripe pear rise from the glass, joined by lemon zest, acacia, fresh herbs and cool, stony minerality. There is real clarity and composure here, with enough aromatic depth to make this feel far more serious than a simple, youthful Gavi.
The palate is dry, precise and beautifully fresh, combining bright lime and orchard fruit with a gently rounded lees-aged texture. Flint, almond and a delicate savoury bitterness shape the long, clean finish. Elegant enough for an aperitif but structured enough for the table, this is benchmark Gavi from one of the region’s defining estates.
For when: A seafood lunch turns into the whole afternoon.
Pairs with: Oysters, dressed crab, seafood linguine, shellfish risotto, grilled sea bass, roast chicken or fresh goat’s cheese.
