Wild Idol was created to offer a genuinely premium alternative for occasions when alcohol is not wanted. Rather than producing conventional wine and removing the alcohol afterwards, the team developed an entirely different process that prevents fermentation from beginning.

After two years of research and trials, Wild Idol selected grapes from Germany’s Rheinhessen region. Its cool climate, naturally refreshing acidity and long viticultural history make it particularly well suited to producing aromatic, finely balanced alcohol-free sparkling drinks.

The project brings together English and German winemaking expertise, applying many of the principles used in premium sparkling-wine production while following a completely alcohol-free path. Attention is given to fruit quality, blending, texture and the fineness of the bubbles, creating a drink designed to feel every bit as considered as the occasion.

The 2023 Sparkling Rosé combines the juice of Müller-Thurgau, Dornfelder and Merlot grapes grown in Rheinhessen, Germany. The red grapes were gently pressed to extract delicate flavour, structure and a pale twilight-pink colour without excessive tannin.

Rather than undergoing fermentation, the freshly pressed grape juice was chilled to just above freezing. This cryo-stabilisation keeps the yeast inactive, preventing sugar from converting into alcohol while preserving the grapes’ natural fruit and aromatics.

The separate juices were carefully blended, filtered and balanced using a natural grape-based dosage. The wine was then carbonated under pressure to produce a refined, persistent stream of bubbles comparable in intensity to a traditional sparkling wine.
