2023 Chablis, Vincent Dauvissat
Chablis, Burgundy, France
“Limestone Lightning”
This is village Chablis with a serious pedigree. The 2023 opens with citrus oil, pear and dried white flowers, backed by that unmistakable Dauvissat signature of oyster shell, chalk and cool stone. It feels quietly powerful from the first swirl, less about flash, more about purity and line. Critics have already called it one of the top performers of the appellation in 2023, which tells you plenty.
On the palate, it has real shape and presence. There is a lovely textural breadth here, but it stays lifted by lively acidity and a distinctly mineral, saline finish. Lemon peel, orchard fruit and a faint umami note run through the core, giving it more depth than you might expect from village Chablis, while still keeping that classic, mouthwatering Chablis snap. It is polished, poised and already hugely impressive, though a couple of years in bottle will only make it more compelling.
For when you want Chablis that overdelivers without needing a Premier Cru label.
Pairs with oysters, grilled sole, roast chicken with lemon, or a table that appreciates the details.
If this wine were a mood, it would be quiet confidence in a crisp white shirt.
Producer
Vincent Dauvissat is one of Chablis’ most revered names, a benchmark domaine known for wines of restraint, longevity and deep mineral character. The 2023 Chablis draws much of its fruit from vineyards near La Forest, helping explain its extra depth and class. Reviewers note its steely core, concentration and textbook Chablis character, all delivered in Dauvissat’s typically understated way.
