White peach, ripe pear and citrus peel meet oyster shell, white flowers, warm stone and fine spice, with a subtle smoky reduction adding depth. On the palate, it is broad, concentrated and beautifully controlled, with ripe orchard fruit wrapped around chalky texture, bright acidity and a long, mouth-watering finish. Les Clos is the largest and most celebrated of the Chablis Grand Crus, occupying a fully south-facing slope at the historic heart of the appellation. Domaine William Fèvre owns 4.11 hectares, around 16% of the climat, much of it at the higher elevations. The combination of mature vines, fossil-rich limestone soils and meticulous élevage gives this wine its hallmark mix of scale, mineral intensity and longevity.

Domaine William Fèvre is one of the defining estates of Chablis, with family winegrowing roots stretching back for generations. William Fèvre took control of the domaine in 1959 and steadily built one of the region’s most important collections of Premier Cru and Grand Cru vineyards, establishing a reputation for precise, mineral Chardonnay with exceptional ageing potential.

The estate now controls some of Chablis’s most significant holdings, including important parcels in Les Clos, Bougros and Côte de Bouguerots. Didier Séguier has played a central role in shaping the modern house style, favouring gentle gravity handling, restrained oak and long élevage to let individual vineyard character remain clear.

Environmental work is equally important. Organic practices have been used extensively across the estate, with biodynamic methods introduced in Premier and Grand Cru vineyards. Since 2024, the domaine has been part of Domaines Barons de Rothschild Lafite. For customers, Les Clos represents William Fèvre at its most complete: powerful, mineral, prestigious and built for long-term development.

The 2023 Les Clos is made from 100% Chardonnay from Domaine William Fèvre’s 4.11-hectare holding, representing around 16% of the entire Grand Cru. Les Clos covers 26.04 hectares and has an ideal southerly orientation. Fèvre’s parcels sit predominantly at higher elevations, where uninterrupted sunlight supports full ripening while the limestone-rich soils preserve freshness.

The soils are unusually rocky, with dense white clay, fossils and stones over limestone formations beginning around 80 centimetres below the surface. William Fèvre has employed organic farming practices extensively since 2000, with biodynamic viticulture introduced across Premier and Grand Cru parcels from 2010.

The grapes are handled gently by gravity without pumping, followed by pneumatic pressing for around 1.5 to 2 hours and light static settling. Fermentation takes place in temperature-controlled stainless-steel tanks. The wine then ages for 20 months, with 40% of the blend spending five to six months in French oak barrels before maturation is completed in small stainless-steel tanks. Alcohol is 13.5%, residual sugar is zero, and the wine is bottled under DIAM.

The result is a Grand Cru with impressive scale but exceptional control. Pear, white peach and citrus are layered with oyster shell, spice and limestone minerality, while the measured oak adds breadth without masking the site. It is still youthful and will benefit from further bottle age, but with air it already shows remarkable depth. For customers prepared to cellar it, the structure, concentration and mineral freshness promise a very long future.
