Broad, mineral and beautifully expressive, this 2023 Bougros shows the generous side of Grand Cru Chablis without losing its precision. Peach, ripe pear and citrus sit alongside white flowers, apple, flint and a cool marine note, with the deep marl and clay soils giving the wine impressive weight and mineral drive.

On the palate, it is ample and fleshy, but lifted by racy acidity and a long saline finish. A measured proportion of French oak brings texture and depth rather than obvious woodiness, while extended ageing gives the wine impressive composure. Domaine William Fèvre is one of the benchmark estates of Chablis, with family winegrowing roots stretching back for generations. William Fèvre took control of the domaine in 1959 and steadily expanded its holdings across some of the appellation’s finest Premier Cru and Grand Cru sites, creating one of Chablis’s most important vineyard portfolios.

The estate now works around 70 hectares, with particularly significant Grand Cru holdings. Didier Séguier has played a central role in the modern style, favouring gentle handling, restrained oak and wines that put vineyard character ahead of winemaking showmanship. Environmental work has also become increasingly important, with organic farming and biodynamic practices used across top vineyard parcels.

Since 2024, the domaine has been part of Domaines Barons de Rothschild Lafite. For customers, the appeal remains firmly rooted in Chablis itself: Chardonnay, mineral soils, precision and longevity. Bougros represents the estate at its broader and more powerful end, combining Grand Cru richness with the freshness and saline character that make William Fèvre such a trusted name.

The 2023 Bougros is made from 100% Chardonnay from Domaine William Fèvre’s 6.23-hectare holding, representing around 49% of the entire Bougros Grand Cru. The vineyard sits at the western end of the Grand Cru slope between approximately 130 and 170 metres above sea level, with a south-westerly exposure and deep marl and clay soils.

The 2023 vintage began with a mild, dry winter and limited April frost damage. A hot May was followed by June storms, while summer heat and rainfall accelerated ripening. Drier conditions in August slowed véraison slightly before an early September harvest delivered generous quantities of healthy fruit.

The grapes are handled gently by gravity without pumping, followed by pneumatic pressing for around 1.5 to 2 hours and light settling. Fermentation takes place in small stainless-steel tanks. The wine then ages for 19 months, with 30% of the blend spending time in French oak barrels, including six months on fine lees, before final maturation in small stainless-steel tanks. Alcohol is 13%, and the wine is bottled under DIAM.

The result is a Bougros with ripe peach, apple and citrus, backed by flint, mineral depth and racy acidity. The oak gives breadth without masking the vineyard, while the long ageing brings polish and structure. It is already compelling with richer seafood and poultry, but the concentration and freshness make further cellaring an equally attractive option.
