2023 Chablis 1er Cru Montmains, Domaine William Fèvre

Tense, mineral and beautifully focused, Montmains shows the cooler, more chiselled side of Premier Cru Chablis. Grapefruit, Granny Smith apple and pear meet jasmine, oyster shell and crushed stone, with a distinctly chalky, marine edge running through the wine. On the palate, it is structured, racy and persistent, with crisp citrus, white fruit and a long saline finish. Domaine William Fèvre is one of the benchmark estates of Chablis, with family winegrowing roots stretching back more than 250 years. William Fèvre took control of the domaine in 1959 and steadily expanded its vineyard holdings, assembling one of the region’s most important collections of Premier Cru and Grand Cru parcels.

The modern style has been shaped by Didier Séguier, whose approach centres on vineyard expression, gentle handling and restrained use of oak. The wines are built around freshness and mineral precision rather than obvious richness, allowing the individual character of each climat to remain clear.

Environmental work has been equally important. Organic farming practices have been used across significant parts of the estate since 2000, with biodynamic viticulture introduced across Premier and Grand Cru parcels from 2010. The domaine achieved HVE3 certification in 2014. Since 2024, it has been owned by the Domaines Barons de Rothschild Lafite family.

For customers, Montmains offers serious Premier Cru pedigree with classic Chablis freshness, mineral concentration and excellent ageing potential.

The 2023 Montmains is made from 100% Chardonnay. Domaine William Fèvre farms 3.89 hectares across the lieux-dits Montmains, Butteaux and Forêt on the left bank of the Serein. The vineyards have a south-easterly orientation, with fairly deep soils over an airy Kimmeridgian subsoil of marl and clay.

The 2023 season began with a mild, dry winter and relatively little damage from April frost. A hot May was followed by June storms, while summer warmth and rain accelerated ripening. Drier conditions in August slowed véraison before an early September harvest delivered generous quantities of healthy fruit.

The grapes are handled gently by gravity without pumping, followed by pneumatic pressing for around 1.5 to 2 hours and light static settling. Fermentation takes place in temperature-controlled stainless-steel vats. The wine then ages for 18 months, with 30% spending five to six months in French oak barrels before maturation is completed in small stainless-steel tanks. Alcohol is 13%, residual sugar is zero, and the wine is bottled under DIAM.

The result is a Premier Cru with grapefruit, green apple and white fruit layered over chalk, oyster shell and persistent saline freshness. The small oak component brings texture rather than flavour, while the extended ageing gives concentration and polish. It is already impressive with seafood, but the acidity and mineral structure make further bottle ageing equally attractive.
