2021 Balthasar Shiraz, Grant Burge

Eden Valley, Australia

Dark cherry, black plum and blueberry rise with ginger, nutmeg, clove and caraway, followed by cocoa and a cool mineral note. Dense in colour and aroma yet impressively fresh, this is Eden Valley Shiraz with fruit power and clarity in equal measure.

Full-bodied and concentrated, with lush dark fruit wrapped in finely textured, persistent tannins. Bright acidity keeps the palate energetic, while French oak adds shape and savoury spice without smothering the fruit. Graceful beneath its power, this is a compelling Shiraz for drinking now or developing further in the cellar.

For when: A serious dinner deserves a Shiraz with power and precision.

Pairs with: Duck confit, roast venison, rosemary lamb, beef short ribs or mushroom Wellington.

Balthasar shows why Eden Valley deserves recognition alongside the warmer Barossa Valley floor. Its elevation and cooler conditions bring greater fragrance and freshness to Shiraz, allowing Grant Burge to combine ripe, concentrated fruit with spice, firm structure and an elegant finish.

Grant Burge Wines grew from five generations of Barossa grape growing and winemaking. The family’s story reaches back to 1865, when Meshach Burge installed fermenting tanks in a farm shed to make wine for friends and family. The modern winery was established in 1988 and has since become known for generous, regionally expressive wines with dependable quality across the range.

Vineyards in both the Barossa Valley and Eden Valley allow the winemaking team to work with contrasting conditions. Eden Valley reaches around 500 metres above sea level, with rocky, acidic soils and a cooler growing season. These conditions suit Shiraz particularly well, preserving aromatic detail and freshness while allowing the grapes to achieve impressive colour, flavour and tannin ripeness.

Craig Stansborough has worked at Grant Burge since 1993, bringing continuity and a deep understanding of the region to the cellar. His approach places fruit at the centre, supported by controlled extraction and carefully judged oak. Balthasar belongs to the Wines of Distinction range and represents the estate’s dedicated expression of Eden Valley Shiraz. It delivers richness without heaviness, making it a trustworthy choice for both immediate enjoyment and long-term cellaring.

Made from 100% Eden Valley Shiraz. Good autumn rain and intermittent spring rainfall maintained soil moisture and encouraged a healthy fruit set. A cooler summer allowed gradual, even ripening, helping the grapes achieve deep colour, fruit concentration and excellent phenolic maturity.

Fermentation took place in stainless steel at 20 to 24°C, with pump-overs four times daily before extraction was reduced towards the end. The wine was gently basket and bag pressed, then matured for 18 months in French oak. Thirty per cent was new French hogsheads, with the remainder aged in two to five year old hogsheads and puncheons. Bottled at 14.3% ABV, with cellaring potential beyond ten years.
