Redcurrant, cassis and blackberry rise from the glass, joined by tobacco leaf, cedar and a gently autumnal savouriness. The fruit is ripe and concentrated, yet there is a cool-climate restraint that keeps the wine fragrant, composed and unmistakably Cabernet.
Medium to full-bodied, with finely grained tannins, bright mineral acidity and beautifully integrated French oak. Dark fruit and cedar flow through a long, precise finish, showing power without heaviness. Already rewarding with a little air, this has the structure and balance to continue developing through 2035.
For when: A serious roast calls for elegance rather than sheer weight.
Pairs with: Roast beef, lamb loin, venison, beef Wellington, duck breast, wild mushrooms or mature Comté.
Yering Station’s Reserve wines are produced only when the vintage and individual vineyard parcels meet the estate’s highest standards. The warmer 2019 season delivered excellent concentration and ripe tannins, with fruit selected from cooler Yarra Valley sites to retain freshness, fragrance and finesse.
