Rich, mature and quietly sophisticated, this classic Dão blend opens with ripe red cherry, cassis and blackberry, layered with black pepper, cocoa and a delicate thread of vanilla. Subtle brick-red tones reveal the wine’s evolution, while gentle savoury notes bring complexity to its generous, beautifully integrated fruit.

Full and rounded on the palate, with excellent volume and a firm structure softened by polished, well-resolved tannins. French oak brings warmth and definition without dominating, while the naturally fresh acidity of the 2019 vintage keeps everything poised. Refined, persistent and immensely satisfying, this is mature Portuguese red at its most comforting and food-friendly.

For when: The fire is lit, and dinner calls for a red with depth, warmth and quiet polish.

Pairs with: Slow-roasted lamb shoulder, venison casserole, grilled ribeye, Portuguese duck rice, porcini mushroom pie or Serra da Estrela cheese.

Known at the estate as Soito Clássico Tinto, the wine comes from the Terras de Azurara subregion of Dão. Its mountain-protected setting, granite soils and pronounced differences between daytime and night-time temperatures allow the grapes to ripen slowly while retaining freshness. Touriga Nacional supplies perfume and structure, while Tinta Roriz, Alfrocheiro and Jaen bring spice, supple fruit and savoury complexity.

Soito Wines was established in 2013 by José Carlos and Sandra Soares, two teachers whose passion for Dão wine inspired them to transform their family property into an ambitious wine estate. Based at Quinta do Soito in Tibalde, near Mangualde, the family has rapidly earned recognition for characterful wines built around the region’s traditional grape varieties.

Quinta do Soito extends across approximately ten hectares, seven of which are planted with vines. The family also works with the seven-hectare Quinta do Cabeço da Roda in nearby Mesquitela. Granite soils, favourable exposure and the elevated, mountain-protected landscape provide excellent conditions for Touriga Nacional, Tinta Roriz, Alfrocheiro, Jaen, Encruzado and Malvasia Fina.

Winemaker Carlos Silva combines traditional Dão varieties with a modern, gravity-assisted winery designed around the natural slope of the land. Grapes are carefully handled and fermented in temperature-controlled vessels before selected wines are matured in French oak. The result is a range that preserves the freshness and ageing ability associated with Dão while offering generous fruit and immediate drinking appeal.

The 2019 Estate Red combines 60% Touriga Nacional, 15% Tinta Roriz, 15% Alfrocheiro and 10% Jaen, grown in the Terras de Azurara subregion on granitic soils. Vineyard density ranges from 3,500 to 4,000 vines per hectare, with yields of approximately five tonnes per hectare.

The 2019 growing season brought significant temperature fluctuations and generally low rainfall, apart from a particularly wet April. The resulting musts displayed high natural acidity, moderate alcohol and a good concentration of phenolic compounds. Traditional vinification took place in stainless-steel tanks, with eight days of skin maceration and fermentation controlled at temperatures of up to 28°C.

Part of the wine was matured for nine months in French oak barrels, adding cocoa, vanilla and gentle spice while retaining the identity of the native varieties. Production comprised 19,500 standard bottles and 300 magnums. The wine can be enjoyed now but has the structure to continue developing in bottle.
