Blueberry, blackberry and dark plum sit beneath clove, cinnamon and cedar, with lifted eucalyptus, white pepper and fresh thyme bringing cool-climate definition. Dark and brooding at first, it opens into a beautifully layered Eden Valley Shiraz with both perfume and authority.
Plush and full-bodied, yet tightly shaped by crushed-stone tannins and a fresh, savoury line. Dark chocolate, liquorice and black spice run through the fruit, while the oak has settled comfortably into the wine’s velvety texture. A polished, serious Shiraz that is drinking well now and still has room to develop.
For when: The steak is resting and the evening has nowhere else to be.
Pairs with: Ribeye steak, roast lamb, braised beef cheek, grilled portobello mushrooms or smoked hard cheese.
