2019 Balthasar Shiraz, Grant Burge

Blueberry, blackberry and dark plum sit beneath clove, cinnamon and cedar, with lifted eucalyptus, white pepper and fresh thyme bringing cool-climate definition. Dark and brooding at first, it opens into a beautifully layered Eden Valley Shiraz with both perfume and authority.

Plush and full-bodied, yet tightly shaped by crushed-stone tannins and a fresh, savoury line. Dark chocolate, liquorice and black spice run through the fruit, while the oak has settled comfortably into the wine’s velvety texture. A polished, serious Shiraz that is drinking well now and still has room to develop.

For when: The steak is resting and the evening has nowhere else to be.

Pairs with: Ribeye steak, roast lamb, braised beef cheek, grilled portobello mushrooms or smoked hard cheese.

Balthasar captures the darker, more structured face of Eden Valley Shiraz. The region’s altitude brings freshness and aromatic lift, giving Grant Burge the concentration expected from the Barossa with an added edge of pepper, herbs and mineral definition.

Grant Burge Wines grew from five generations of Barossa grape growing and winemaking. The family’s story reaches back to 1865, when Meshach Burge installed fermenting tanks in a farm shed to make wine for friends and family. The modern winery was established in 1988 and has since become known for generous, regionally expressive wines with dependable quality across the range.

Vineyards in both the Barossa Valley and Eden Valley allow the winemaking team to work with contrasting conditions. Eden Valley reaches around 500 metres above sea level, with rocky, acidic soils and a cooler growing season. These conditions suit Shiraz particularly well, preserving aromatic detail and freshness while allowing the grapes to achieve impressive colour, flavour and tannin ripeness.

Craig Stansborough has worked at Grant Burge since 1993, bringing continuity and a deep understanding of the region to the cellar. His approach places fruit at the centre, supported by controlled extraction and carefully judged oak. Balthasar belongs to the Wines of Distinction range and represents the estate’s dedicated expression of Eden Valley Shiraz. It delivers richness without heaviness, making it a trustworthy choice for both immediate enjoyment and long-term cellaring.

Made from 100% Shiraz grown in Eden Valley. Fermentation took place in stainless steel, reaching 28°C, with pump-overs four times daily before becoming gentler towards the end of fermentation. The fruit was pressed using a combination of basket and bag presses.

The wine matured for 18 months in French oak. Thirty-eight per cent was new French hogsheads, with the remainder aged in French hogsheads and puncheons between two and five years old. Bottled under screw cap at 14% ABV.
