This is mature white Burgundy with a generous Mâconnais heart. The 2012 Pouilly-Fuissé ‘Cuvée Prestige’ has moved into a mellow, golden phase, with ripe pear, baked apple, lemon curd, honey, hazelnut, toast and a little buttered richness. It still carries the clean limestone line of Pouilly-Fuissé, but time has added softness, depth and a quietly savoury glow.
On the palate, it is rounded and textured, with orchard fruit, citrus peel, toasted almond and honeyed Chardonnay warmth. The finish brings grapefruit freshness and mineral lift, keeping the wine poised rather than heavy. A bottle for drinking now, ideally not too cold, with the comfort and complexity of mature Burgundy doing the talking.

The starter deserves something with age, polish and a little golden hush.
Pairs with
Scallops, roast cod, lobster, chicken in cream sauce, veal blanquette, mushroom tart, Comté or baked Camembert.
Joseph Deshaires is closely linked to Château de Beauregard, one of the established names of the southern Mâconnais. The Cuvée Prestige draws on Pouilly-Fuissé’s classic villages of Fuissé, Solutré-Pouilly and Vergisson, with Château de Beauregard’s holdings spread across these limestone slopes beneath the famous rocks of Solutré and Vergisson. The result is a generous yet mineral style of Chardonnay, true to the appellation and particularly appealing with a little bottle age.
