2019 Château Canon, Saint-Émilion Grand Cru
Saint-Emilion, Bordeaux, France
An exquisite expression of modern Saint-Émilion elegance, the 2019 Château Canon is all about purity, precision and poise. The nose is a masterclass in restraint, black cherry, crushed violet, graphite and subtle notes of cedar and cocoa powder. The palate is beautifully layered: supple Merlot fruit glides over a frame of taut Cabernet Franc tannin, the whole lifted by a cool, limestone-driven freshness. Silky, focused and effortlessly composed, it’s a wine that speaks softly but leaves a lasting impression - graceful today, extraordinary in time.
For when: you want beauty that doesn’t need to announce itself.
Pairs with: filet mignon, mushroom duxelles, or truffle risotto.
Château Canon sits atop the limestone plateau just west of Saint-Émilion, commanding one of Bordeaux’s most revered terroirs. The estate dates back to the 18th century, but its modern chapter truly began after Chanel purchased it in 1996, restoring both the château and the vineyards to pristine form. Today, under the direction of Nicolas Audebert, Canon produces wines that blend Right-Bank generosity with Left-Bank precision, a seamless marriage of power and finesse.
The 2019 vintage, a near-perfect growing season, delivered small berries of intense concentration balanced by vivid freshness. The blend, roughly 74% Merlot and 26% Cabernet Franc, was aged in 50% new French oak, shaping a wine of incredible harmony and texture. Critically acclaimed, this Canon is pure limestone elegance, timeless Bordeaux with a whisper rather than a roar.

"Deep garnet-purple in color, the 2019 Canon prances out with showy notes of wild blueberries, fresh boysenberries, and black raspberries giving way to fragrant scents of sassafras, cumin seed, star anise, and red roses. The full-bodied palate delivers waves of bright black and blue fruits with wonderful freshness and plush, rounded tannins, finishing long and energetic."

Perched high on the limestone plateau of Saint-Émilion, Château Canon stands as one of Bordeaux’s great modern icons, a perfect fusion of heritage, precision and grace. Founded in the mid-18th century and named after Jacques Kanon, the naval officer who first recognised the brilliance of this terroir, the estate has long been celebrated for producing wines of remarkable purity and balance.
Canon’s 34 hectares of vineyards lie on a mosaic of limestone and clay, planted primarily to Merlot and Cabernet Franc. This elevated, sun-washed plateau gives the wines their signature tension, ripe fruit and depth counterbalanced by mineral freshness and poise. The vines are tended with meticulous care: sustainable farming, hand harvesting, and plot-by-plot vinification that captures every nuance of the site.
Since Chanel acquired the property in 1996, the estate has undergone a quiet renaissance. Under the deft guidance of Nicolas Audebert, formerly of Krug and Cheval des Andes, Canon has reclaimed its place among Bordeaux’s elite, consistently delivering wines of precision, purity and age-worthy elegance. The style is unmistakable: seamless, finely sculpted, and always defined by the limestone beneath.
Today, Château Canon is less a château than a statement: proof that Saint-Émilion’s greatest wines don’t shout for attention, they command it with effortless grace.
