Organic "Valdobbiadene" Prosecco Superiore DOCG Brut, La Cantina Pizzolato

Settimo Pizzolato is the fifth generation of grower at the estate, a man full of charisma and innovative wisdom. He has moved from making early steps towards organic viticulture and bottling his own wine twenty years ago, fast forward to now, boasting a large winery with a fantastic team exporting all over the world. His wife Sabrina and children Federico and Stefania all work in the business, and their youngest Eduardo is learning English.

The vines at the Pizzolato estate are on pebbly banks of river deposit, which are irrigated by concrete channels that were put in in the 1950s during Italy’s reconstruction post-war. Settimo also has a handful of neighbouring contracted growers that he’s worked with for years, all of whom farm organically, and all to his exacting standards.

The grapes are pressed and the resulting must is allowed to decant. Selected yeasts are added for alcoholic fermentation at a controlled temperature of about 14°C. After preparation of the base wine, a second fermentation is induced in an autoclave until an internal pressure above 4.5 atm is obtained.
