This is Champagne with drama built in. Presented in Champagne Carbon’s signature carbon fibre bottle, it makes a serious entrance, but there is far more here than just the theatre. Made from 50% Chardonnay, 25% Pinot Noir and 25% Pinot Meunier, with fermentation in small oak barrels, no malolactic fermentation, and around six years on lees, this is a Brut with both polish and presence.
The nose is captivating and precise, opening on seashell, white flowers and a saline, stony freshness before broadening into butter, cream, praline and a touch of honeyed richness. On the palate, it feels generous and velvety, with notes of toasted pastry, salted butter caramel, roasted nuts and fine wood spice, all lifted by a clean line of freshness that keeps the wine focused rather than flashy. There is real depth here, but also elegance, the kind of Champagne that feels luxurious and energetic in equal measure, finishing long, savoury and beautifully composed.Â
For when: the table is immaculate, the music is low, and the bottle needs to feel like part of the occasion.
Pairs with: smoked salmon, scallops, turbot in beurre blanc, oysters, or anything that deserves something sleek and indulgent.
Champagne Carbon was created to bring together serious winemaking and a more design-led sense of luxury, and this cuvée captures that beautifully. The extended lees ageing, oak fermentation and relatively moderate Brut dosage give it its creamy breadth and layered texture, while the absence of malolactic fermentation helps preserve a fresher, more tensile edge beneath all that richness.
