Dark-fruited, polished and quietly confident, this is Cabernet with all the depth you want, but with a softer, more relaxed stride than many. Blackcurrant, dark cherry and ripe plum lead the way, joined by a hint of cassis, a touch of cedar and a gentle savoury spice that gives the wine shape and lift. The palate is smooth and supple, with refined tannins and a lovely sense of balance, the fruit generous and expressive, but never overworked. There is structure here, certainly, but it arrives wrapped in ease, making the wine feel composed, drinkable and very well judged.

For when: the roast is on, the conversation is flowing, and the red needs broad appeal with proper substance.

Varner Wines is the long-running California project of twin brothers Jim and Bob Varner, who began planting vines in 1980 and built their reputation on finely tuned, site-driven Chardonnay and Pinot Noir. Their name became closely associated with the cool, elevated conditions of the Santa Cruz Mountains, where a low-intervention approach in both vineyard and cellar helped shape wines of precision, freshness and quiet depth. Alongside the more sought-after Varner bottlings, the brothers also created the Foxglove label to offer a more open, approachable expression of the same philosophy, wines made with care, clarity and a strong sense of place, but with everyday drinkability at their heart.
