2021 Sparkling Furmint Brut Nature, Juliet Victor
Tokaj, Hungary
Bright, precise and wonderfully unexpected, this is Tokaj stepping out in sparkling form with real confidence. Made from 100% Furmint, it opens with lemon peel, quince and white peach, lifted by a delicate flicker of ginger and a fine floral edge. Beneath the fruit sits a subtle brioche note from extended lees ageing, giving the wine a little breadth and softness without taking away from its crystalline freshness. The palate is dry, energetic and beautifully focused, with fine bubbles, salty mineral tension and Furmint’s naturally vivid acidity driving everything forward. It feels clean, stony and quietly thrilling, a sparkling wine with both charm and edge.
For when: you want something sparkling, but not something obvious.
Pairs with: oysters, smoked trout, fresh cheeses, sushi or citrus-dressed seafood.
If this wine were a sound: the clean ring of a glass bell across cool stone.
Juliet Victor is based in Mád, in the heart of Hungary’s historic Tokaj region, an area better known for its legendary sweet wines but increasingly exciting for dry and sparkling Furmint. This 2021 Brut Nature comes from the cool, south-east-facing Király vineyard and is made using the traditional method, with secondary fermentation in bottle and extended lees ageing to build texture and complexity. With no dosage, it lets Furmint’s natural acidity, mineral drive and orchard-fruit clarity take centre stage, showing just how compelling Tokaj can be beyond its classic sweet-wine identity.
