Old Vines, Quiet Authority

Deep, savoury and beautifully self-assured, this is an Australian red that feels generous from the outset but never loses its poise. Dark berry, blackcurrant and ripe plum fruit sit at the heart of the wine, wrapped in notes of bay leaf, mint and black pepper, with cedar, spice and a gentle herbal lift adding complexity. There is richness here, certainly, but it is delivered with an easy, velvety grace rather than brute force. The palate is smooth, structured and quietly powerful, with old-vine depth, polished tannins and a long, savoury finish that lingers on dark fruit, spice and warm cedar. 

For when: the roast is slow-cooking, the fire is lit, and the bottle needs to feel every bit as settled as the evening.
Pairs with: roast beef, lamb, chargrilled mushrooms, or something rich and herb-laced from the barbecue.
If this wine were a place: a wide Australian riverbank at dusk, with eucalyptus in the air and old vines rooted deep in warm earth.

Tahbilk is one of Australia’s great historic estates, based in Victoria’s Nagambie Lakes region, with vineyards grouped along the Goulburn River on sandy loam soils rich in ferric oxide. The estate is particularly celebrated for its extraordinary old Shiraz vineyards, including ungrafted plantings dating back to the 1860s, preserved in sandy soils where phylloxera could not take hold. That heritage of old vines and patient winemaking comes through beautifully here, giving the wine its lovely combination of generosity, complexity and underlying elegance.

Established in 1860, Tahbilk is an historic family-owned winery, renowned for its rare aged Marsanne. The estate has the world’s largest single holding of the varietal and produces Marsanne from vines established in 1927, which are among the oldest in the world. Tahbilk is known as ‘tabilk tabilk’ in the language of the Daungwurrung clans, which translates as the ‘place of many waterholes’. It perfectly describes this premium viticultural landscape, which is located in the Nagambie Lakes region of Central Victoria. The estate comprises 1,214 hectares, including a seven-mile frontage to the Goulburn River. Environmental sustainability is paramount at Tahbilk and in 2013 they became carbon neutral. In 2016, Tahbilk was awarded ‘Winery of the Year’ by James Halliday.
Tahbilk is home to some 200 hectares of vineyards specialising in grape varietals from the Rhone including whites varietals: Marsanne, Viognier and Roussanne and red varietals Shiraz, Grenache and Mourvedre. Also growing Cabernet Sauvignon, Merlot, Cabernet Franc, Chardonnay, Riesling, Pinot Gris, Sauvignon Blanc and Verdelho grapes.

The grapes were picked based on flavour analysis, at between 12.5 to 14.5° Baumé. The fruit was destemmed, lightly crushed and cooled to 12 to 14°C before being transferred to open vats. The vats were inoculated with selected yeast, plunging took place on the first day with pump-overs from then on. Fermentation slowly warmed up to 25 to 28°C and lasted seven to nine days. The wine was matured in 10 to 100-year old large format French oak barrels for 18 months.
