Crisp, sculpted and gloriously refreshing, the 2025 Assyrtiko from Muses Estate captures everything that makes this grape so compelling. Bright citrus and white blossom lead the way, with lemon, grapefruit and green apple wrapped around a cool flinty edge and a distinctly saline finish. There is real intensity here, but it comes with shape and restraint rather than force, the palate structured and mineral, with a lovely creamy touch that softens the wine’s natural acidity without dulling its energy. Taut, textural and full of lift, this is a white that feels sunlit and precise all at once.

For when: seafood is ordered, the table is outside, and the bottle needs to disappear quickly.
Pairs with: grilled prawns, tomato salad, sea bass, or salty feta on a warm afternoon.

Muses Estate is based in the Valley of the Muses in Central Greece, at the foot of Mount Helicon, where altitude, sunshine and cooling breezes help shape wines of freshness and clarity. The estate has built a strong reputation for expressing both indigenous Greek varieties and international grapes with precision and charm, and this Assyrtiko is a fine example of that approach, combining the variety’s signature mineral drive with the brightness and poise of this distinctive inland Greek terroir.

His passion for wine and the millennia-old winemaking traditions of his homeland, led Nikolaos Zaharias to create a small winery in 1946 in Askri, in Central Greece, fulfilling his life-long dream. In 1967, his son, Athanasios Zaharias, entered the family business and brought with him dynamic and forward-thinking ideas, and gradually they transformed the small artisanal winery into a modern winery. In 2005, the year when ‘Muses Estate’ was created, it was time for the third generation Nikos, Stelios and Panayiotis, to take their place in the family business. Their skills, scientific knowledge and youthful ideas, combined with the family tradition and experience further enriched Muses Estate. From their vines grown on the slopes of the Valley of the Muses, at the foot of Mount Helicon, they aim to produce wines that are in perfect harmony with the ecosystem, and are representative of the historic terroir, as well as the family itself. They succeed: their exquisite wines are vibrant with mountain freshness that truly evoke the senses.

The juice is cold-settled naturally before fermentation to clarify while retaining essential aromatics and texture. Fermentation takes place with natural yeast in stainless steel tanks at 16-18°C to ensure a slow, steady ferment, preserving delicate citrus, floral, and mineral notes. The wine remains on the lees for 6 months, adding richness, mouthfeel, and complexity with batonnage conducted every 2-3 weeks to enhance texture. Where possible, gravity flow is used to move the wine gently, reducing the need for pumping and preserving the wine’s freshness
