Domaine William Fèvre is one of the defining names of Chablis, with family winegrowing roots stretching back for generations. William Fèvre took control of the estate in 1959 and steadily expanded its holdings across many of the appellation’s most important Premier Cru and Grand Cru vineyards.

Today, the domaine controls one of Chablis’s strongest collections of classified sites. Didier Séguier has played a central role in shaping the modern house style, favouring gentle gravity handling, restrained oak and long élevage so that each vineyard remains clearly recognisable in the glass.

Environmental work is equally important. Organic farming has been developed progressively across the estate, while biodynamic methods have also been used in Premier and Grand Cru parcels. Since 2024, the domaine has been part of Domaines Barons de Rothschild Lafite.

For customers, Les Preuses represents the more refined side of William Fèvre’s Grand Cru range. It offers concentration and longevity, but its defining qualities are perfume, salinity, finesse and the long mineral finish that makes great Chablis so compelling.

The 2023 Les Preuses is made from 100% Chardonnay. Domaine William Fèvre owns 2.55 hectares, representing around 22% of the 11.44-hectare Grand Cru. The northernmost parcels have a south-westerly exposure, while the others face south and south-east. Dense, compact clay rests over a limestone slab, giving the wine both depth and strong mineral definition.

The 2023 vintage began with a mild, dry winter and little damage from April frost. A hot May was followed by June storms, while summer warmth and rainfall accelerated ripening. Dry weather in August slowed véraison slightly before an early September harvest delivered healthy fruit in generous quantities.

The grapes are handled gently by gravity without pumping. A short pneumatic pressing of around 1.5 to 2 hours is followed by light static settling, with fermentation taking place in temperature-controlled stainless-steel tanks. The wine ages for 19 months, with 35% spending five to six months in French oak before maturation is completed in small stainless-steel tanks. Alcohol is 13%, residual sugar is zero, and the wine is bottled under DIAM.

The result is a Grand Cru with citrus, pear, white flowers and oyster-shell salinity wrapped around a precise, chalky core. The oak brings texture rather than flavour, while the long ageing gives the wine polish and depth. It is already compelling with fine seafood, but the concentration, acidity and mineral structure make further cellaring especially attractive.
