Tense, mineral and intensely Chablis, Côte de Bouguerots shows a cooler, more chiselled face of the Bougros Grand Cru. Lemon oil, white peach and nectarine meet oyster shell, white flowers and crushed stone, with a touch of spice and flint running underneath. Its steep position close to the Serein River gives the wine a piercing saline character and a striking sense of energy.

On the palate, it is powerful but remarkably precise, with concentrated citrus and stone fruit wrapped around bright acidity and a long, mouth-watering mineral finish. Partial ageing in French oak adds texture without softening its edge. This is a serious bottle for customers who want Grand Cru Chablis with tension, longevity and real site identity, equally compelling with fine seafood now or after further cellaring.

Côte de Bouguerots is a distinct parcel at the foot of Bougros, close to the Serein River, where the steep slope and shallow soils create a wine markedly different from the broader, fleshier Bougros bottling. Domaine William Fèvre has bottled it separately since the late 1990s, recognising its exceptional combination of salinity, power and precision.

Domaine William Fèvre is one of the defining estates of Chablis, with family winegrowing roots stretching back for generations. William Fèvre took charge of the domaine in 1959 and steadily assembled one of the appellation’s most important collections of Premier Cru and Grand Cru vineyards.

The estate has become particularly respected for the precision with which it expresses individual sites. Didier Séguier has played a central role in shaping the modern style, favouring gravity handling, restrained oak and long élevage rather than obvious winemaking signatures. Environmental work has developed alongside that approach, with organic farming and biodynamic principles becoming increasingly important across the domaine’s top vineyards.

Since 2024, Domaine William Fèvre has been part of Domaines Barons de Rothschild Lafite. For customers, the attraction remains rooted firmly in Chablis: serious vineyard holdings, mineral Chardonnay and wines built to age. Côte de Bouguerots is one of the domaine’s most distinctive bottlings, combining Grand Cru concentration with exceptional salinity and tension.

The 2023 Côte de Bouguerots is made from 100% Chardonnay from Domaine William Fèvre’s 2.11-hectare holding. The parcel lies at the steep, south-facing foot of the Bougros Grand Cru slope, close to the Serein River. Shallow soils mix clay and stones, naturally limiting vine vigour and yields and giving the wine its characteristic concentration and mineral intensity.

The 2023 season began with a mild, dry winter and relatively little frost damage. A hot May was followed by June storms, while summer heat and rain accelerated ripening. Dry conditions in August slowed véraison slightly, before an early September harvest delivered generous quantities of healthy fruit.

The grapes are handled by gravity without pumping, followed by gentle pneumatic pressing for around 1.5 to 2 hours and light settling. Fermentation takes place in temperature-controlled stainless steel. The wine is aged for 19 months, with 40% spending five to six months in French oak before maturation is completed in small stainless-steel tanks. Alcohol is 13%, residual sugar is zero, and the wine is bottled under DIAM.

The result is a powerful but finely drawn Chablis, with citrus, peach, flint and oyster-shell salinity running through a taut, energetic palate. The measured oak gives breadth without blurring the mineral edge. It can be enjoyed now with rich seafood, but the acidity, concentration and long finish make this an especially strong candidate for further bottle ageing.
