Broad, mineral and beautifully controlled, this 2021 Bougros shows the naturally generous side of Grand Cru Chablis without losing the cool precision of the vintage. White peach, pear and citrus sit alongside orange blossom, chalk, oyster shell and a subtle smoky note. Bougros gives the wine real breadth, while the cooler 2021 season keeps everything taut, fresh and unmistakably Chablis.

On the palate, it is full and layered, with ripe orchard fruit, bright acidity and a long saline finish. There is plenty of weight, but the mineral backbone keeps the wine focused rather than rich for richness’s sake. This is a serious Grand Cru for customers who want Chablis with scale, texture and ageing potential, while still retaining the freshness to shine alongside fine food.

Bougros sits at the western end of the Chablis Grand Cru slope and is known for producing some of the appellation’s broadest, most powerful wines. Domaine William Fèvre owns 6.23 hectares, almost half of the climat, giving the estate exceptional familiarity with the site. In the cooler 2021 vintage, that natural richness is balanced by particularly vivid acidity and mineral freshness.

Domaine William Fèvre is one of the benchmark names of Chablis. William Fèvre took over his family estate in 1959 and steadily built one of the appellation’s most important collections of Premier Cru and Grand Cru vineyards, creating a domaine defined by both scale and exceptional site quality.

The estate works around 70 hectares across Chablis, including significant holdings in the great Grand Cru climats. Didier Séguier has played a central role in shaping the modern style, favouring gentle handling, restrained oak and a clear expression of each vineyard rather than richness for its own sake.

Environmental work has also become central to the domaine. Organic practices were introduced progressively across the vineyards, with formal organic conversion beginning before the 2021 vintage, while biodynamic methods have also been used in top parcels. Since 2024, Domaine William Fèvre has been part of Domaines Barons de Rothschild Lafite. For customers, Bougros represents the estate at its most powerful: Grand Cru pedigree, substantial vineyard ownership and a style that combines richness with classic Chablis minerality.

The 2021 Bougros is made from 100% Chardonnay from Domaine William Fèvre’s 6.23-hectare holding, representing around 49% of the entire Bougros Grand Cru. The vineyard lies at the north-western end of the Grand Cru slope, between approximately 130 and 170 metres above sea level, with a south-westerly exposure and relatively deep marl and clay soils.

The 2021 season was challenging and cool. Severe April frosts damaged early growth, followed by a wet summer that slowed ripening. Harvest began on 17 September, considerably later than several preceding vintages, producing wines with particularly vivid acidity, freshness and classical structure.

The grapes are harvested by hand and handled using gravity to avoid unnecessary pumping. A short pneumatic pressing of around 1.5 to 2 hours is followed by light settling. Fermentation takes place across French oak and small stainless-steel tanks, with used oak chosen to build texture without obvious woody flavour. Published technical information for the 2021 wine records extended ageing before final maturation in stainless steel. Alcohol is listed at 13%.

The result is a Bougros with impressive breadth but a very fresh core. Peach, pear and citrus sit alongside oyster shell, smoke and saline minerals, while the cool vintage gives the wine unusually energetic acidity. It can be enjoyed now with decanting and rich seafood, but its concentration and structure make further cellaring particularly attractive.
