2020 Chablis, Vincent Dauvissat
Chablis, Burgundy, France
Oyster Cut
Vincent Dauvissat’s 2020 Chablis is a village wine in name, but not in spirit. This is classic Dauvissat: lemon pith, green apple, oyster shell, white flowers, a flicker of smoke and that cool chalky precision that seems to sharpen as the wine opens. The 2020 vintage brings a little extra breadth and ripeness, but the wine never loses its poise. It feels bright, composed and quietly commanding.
On the palate, it is sleek and concentrated, with citrus oil, pear, white peach, wet stone and a fine saline edge. There is substance through the middle, almost a gentle creaminess, before the acidity tightens everything into a long, mineral finish. Already compelling, but built with the kind of balance that makes patience look very wise.
For when
A long seafood lunch turns into the best kind of afternoon.
Pairs with

If this wine were…
A white linen shirt, perfectly pressed, worn barefoot on a stone terrace by the sea.
Domaine Vincent Dauvissat is one of the great names of Chablis, revered for wines that make even village-level parcels feel profound. The family has deep roots in the region, with Robert Dauvissat bottling under the family name in 1931, and today the domaine’s small holdings include prized parcels in Les Clos, Les Preuses, La Forest, Vaillons and Chablis itself. The village Chablis parcel sits opposite La Forest on classic Kimmeridgian soils, giving this wine unusual depth, mineral intensity and ageing potential for its appellation.
