The grapes are carefully protected from oxidation immediately after harvesting, which is done at night to takeadvantage of the coolest temperatures. Right after picking, the juice is separated using specially designed binswith double bottoms and is promptly transferred into vats. These vats are flushed with carbonic gas and the juiceis stabilized at 8°C for 24 hours to encourage natural clarification through pulp precipitation, followed by racking.Fermentation then begins with the addition of specially selected yeasts chosen for their aromatic qualities andcontinues for 40 days in stainless steel vats at low temperatures. The wine undergoes a three-month vinificationprocess in closed vats on fine lees, followed by racking, fining, and eventual bottling.
