2004 Serpico Cabernet Sauvignon, Mitolo
McLaren Vale, Australia
McLaren Maverick
Deep, brooding and gloriously mature, this McLaren Vale Cabernet shows Serpico at its most intense and unconventional. Blackcurrant, blackberry, plum and cassis roll through the glass with notes of cedar, mocha, dried herbs, liquorice and polished oak. Time has softened the power into something darker and more savoury, with the richness of dried fruit meeting the quiet complexity of leather, spice and forest floor.
The palate is full and velvety, still carrying the concentration that comes from its Amarone-inspired approach, yet now wrapped in a smoother, more contemplative shape. There is plenty of muscle here, but also warmth, length and a supple, mature dignity. It is a bold Australian Cabernet that has aged into something broad, serious and deeply satisfying.
For when: the evening calls for a rare red with weight, age and a little rebellious swagger.
Pairs with: ribeye steak, roast lamb, venison, beef short ribs, aged cheddar, mushroom ragù or chargrilled aubergine.
Mitolo was founded by Frank Mitolo in McLaren Vale, bringing together Italian family heritage, bold ambition and the winemaking talent of Ben Glaetzer. Serpico is one of the estate’s most distinctive wines, a Cabernet Sauvignon made with an Amarone-inspired method that reflects the Mitolo family’s Italian roots and their willingness to step outside convention. It remains a striking expression of McLaren Vale Cabernet, rich, powerful and unmistakably individual.
