2022 `Imprint` Primitivo Appassito, A Mano

The one that always steals the table.

Dark, heady and gloriously full of itself, this is Primitivo turned up a notch. The appassimento drying brings extra richness and concentration, layering ripe plum, crushed raspberry and black cherry with sweet Mediterranean spice and a soft, warming depth. The palate is plush and full-bodied, with a generous sweep of rounded fruit, yet there is still a lovely balance here, keeping all that power smooth, polished and dangerously easy to love. Decadent, comforting and made for lingering over.

For when: The food is hearty, the candles are lit, and no one is in a rush.
Pairs with: Beef short ribs, rich ragù or aged hard cheeses.

A Mano, founded by Mark Shannon and Elvezia Sbalchiero, has become one of the names most closely associated with modern, quality-focused Primitivo. For Imprint, the fruit comes from a selection of Mark’s four favourite vineyards in the heart of Puglia’s Primitivo country, where ancient alberello bush vines, many between 70 and 100 years old, grow in fossil-rich former seabed soils. In 2022, a hot, dry season followed by timely August rain produced healthy, beautifully balanced fruit. After harvest, the grapes were dried for five weeks before slow fermentation and ageing in underground cement tanks, creating a wine of real concentration, warmth and unmistakable southern Italian character.

A Mano is the creation of Californian winemaker Mark Shannon and northern Italian wine marketing expert Elvezia Sbalchiero, who fell for Puglia and made it their winemaking home. Their story began with a visit to the region’s ancient Primitivo vineyards, and what was meant to be a short trip became the foundation of a producer that has helped redefine the grape’s reputation through a more polished, quality-led, modern style.

Working closely with growers and paying premium prices for exceptional fruit, A Mano has built its name on old-vine material, careful sourcing, and a belief that Primitivo can offer far more than simple power. Their wines capture the warmth and generosity of southern Italy, but with freshness, precision and balance, showing why A Mano has become one of the names most closely associated with the modern rise of Primitivo from Puglia.

The Primitivo grapes were dried for five weeks. On arrival at the cellars, the grapes were pressed, destemmed and cooled to 18°C and the must was allowed to ferment at its own pace. After racking in mid-November, the wine remained in an underground cement tank where the temperature did not exceed 10°C until being bottled under Stelvin.
