Pegasus Bay, located in North Canterbury’s Waipara Valley, is a benchmark New Zealand winery founded by the Donaldson family and known for its dedication to crafting wines of character and longevity.

‘Finale’ is a botrytised dessert wine made only in exceptional vintages when late-season conditions allow noble rot to develop. Inspired by the great wines of Sauternes and crafted using traditional Bordeaux techniques, ‘Finale’ is a richly expressive blend of Semillon and Sauvignon Blanc. Only the most beautifully raisined, botrytis-affected grapes are hand-selected, gently pressed, and vinified in French oak barriques (50% new). Fermented and matured on lees for 12 months before blending and bottling, ‘Finale’ is a testament to both patience and precision in winemaking.

The 2019 ‘Finale’ glows a radiant golden hue, immediately hinting at its opulence. The bouquet is captivating, an elegant mosaic of ripe apricot, lemon curd, and crystallised ginger, layered with aromas of honeysuckle, dried mango, and a delicate wisp of baking spice. The influence of noble rot is profound, lending a luscious, honeyed richness to the palate. Semillon contributes weight and structure, while Sauvignon Blanc offers a bright thread of acidity, bringing freshness and lift to the wine’s luxurious texture. Intensely flavoured yet perfectly poised, the finish is persistent and graceful, echoing notes of citrus zest and toasted brioche. Pegasus Bay is one of New Zealand’s most esteemed family-owned wineries, located in the Waipara Valley of North Canterbury. Founded in 1986 by Ivan and Christine Donaldson, who were among the pioneers of viticulture in the region, the estate has remained a true family affair, with all four of their sons actively involved in its operation today.
The vineyard is situated on north-facing, free-draining terraces in the lee of the Teviotdale Range, which offers natural shelter from coastal winds and creates a unique mesoclimate ideal for grape growing. The soils, known as the Glasnevin Gravels, are a blend of greywacke stones, silt, and loam, washed down over millennia, and are naturally low in fertility. This encourages deep root growth and low yields, resulting in fruit of exceptional concentration and character. The climate, with warm days and cool nights, ensures extended ripening and excellent natural acidity.
Pegasus Bay is renowned for producing complex, age-worthy wines, particularly Pinot Noir and Riesling, along with richly textured Chardonnay and Sauvignon Blanc. Their wines are widely acclaimed both domestically and internationally for their balance, depth, and strong sense of place.

Only the most beautifully raisined, perfectly botrytic bunches were selected to make this wine. A small amount of very concentrated juice was then obtained from these grapes and put into new French artisan oak barriques (50% new), where the two varieties were left to ferment separately. The wine was then matured in these barriques on its natural deposits of yeast lees (sur lie) for 12 months, prior to blending and bottling.
