Floral, smoky and deeply mineral, Foscarino is Inama’s richer, more layered take on Soave Classico. Elderflower, chamomile and iris sit alongside peach, green apple, citrus and a faint honeyed note, with the volcanic soils of Monte Foscarino bringing smoke, stone and savoury depth. It feels broader than Carbonare, but still unmistakably fresh and precise.

On the palate, it is creamy, complex and beautifully balanced, with ripe orchard fruit, salty minerals and a long almond-edged finish. The mix of older oak and steel gives texture without obvious woodiness, while extended lees ageing adds depth and polish. 

For when: A long lunch needs a textured Italian white with mineral depth and quiet confidence.

Pairs with: Vitello tonnato, seafood risotto, sushi, baccalà alla vicentina, grilled fish, pumpkin risotto, vegetable couscous or Monte Veronese.

Foscarino is one of Inama’s defining Soave Classico wines, drawn from old vines on the volcanic slopes of Monte Foscarino. It matters because it shows how serious Garganega can become when given time, texture and a strong site: floral and mineral when young, then increasingly complex, savoury and layered with age.

Inama is one of the producers most closely linked with the modern revival of Soave Classico. Giuseppe “Bepi” Inama began buying vineyards on Monte Foscarino in 1964, convinced that the volcanic hills around Soave could produce whites with far more character and longevity than the region’s mass-market reputation suggested.

That belief shaped the estate’s direction. Stefano Inama later developed the family’s modern style, while the third generation, Matteo, Alessio and Luca, now works alongside him. The family focuses its white wines entirely on Soave Classico, where Garganega grows on ancient volcanic soils, while its reds come from the limestone-rich Colli Berici.

Inama’s strength lies in treating Garganega as a serious terroir grape. The wines combine aromatic lift, mineral freshness and texture rather than relying on obvious oak or simple fruit. Foscarino is one of the clearest examples of that philosophy: a site-led white with depth, ageing potential and enough savoury complexity to sit comfortably at the table.

The 2023 Foscarino is made from 100% Garganega selected from old vines on Monte Foscarino in the Soave Classico zone. The vineyards sit on basaltic volcanic soils with a south-east exposure, giving the wine both ripeness and the smoky, mineral character that defines the site. Alcohol is 12.5%.

Fermentation takes place across used barriques, large oak casks and stainless-steel tanks. The wine remains on its lees for around 6 months, with bâtonnage every 6 weeks, before a further 6 months of ageing in stainless steel on fine lees. The estate lists the wine as conventionally farmed, and exact-vintage listings identify it as vegan.

The result is a Soave with more breadth and texture than a simple stainless-steel style, but without losing freshness. Peach, citrus, flowers and almond sit over a smoky, saline backbone, while the lees ageing brings creaminess and length. It is already excellent to drink now, especially with seafood and richer vegetable dishes, but Inama also gives Foscarino an ageing horizon of around 10 to 15 years.
