Bright, mineral and beautifully precise, Carbonare is Inama’s cooler, more vertical expression of Soave Classico. Citrus peel, green melon and white flowers meet rosemary, grapefruit and a fine stony note, all carried by the volcanic basalt of the vineyard. It feels less about ripe fruit and more about energy, purity and the quiet savoury character that makes serious Garganega so compelling.

On the palate, it is focused and finely textured, with crisp acidity, tart orchard fruit and a long saline finish. Stainless-steel ageing keeps the wine clean and transparent, while time on fine lees brings enough texture to stop it feeling lean.

For when: A seafood dinner needs a white with tension, minerality and understated Italian elegance.

Pairs with: Oysters, baccalà mantecato, grilled prawns, sushi, asparagus, sea bass, fresh goat’s cheese or herb-led risotto.

Carbonare is one of Inama’s most distinctive Soave Classico wines, drawn from an east-facing vineyard shaped by dark volcanic basalt and cooling air descending from the Val d’Alpone. It shows a more linear, mineral side of Garganega than the broader Foscarino style, making it an especially strong choice for those who value freshness, terroir and precision.

Inama is one of the estates most closely associated with the modern revival of Soave Classico. Giuseppe “Bepi” Inama began buying vineyards on Monte Foscarino in 1964, convinced that the volcanic hills around Soave could produce white wines of far greater distinction than the region’s mass-market reputation suggested.

His son Stefano later helped define the modern Inama style, while the third generation, Matteo, Alessio and Luca, now works alongside him across the family vineyards and winery. The estate focuses on two very different Veneto landscapes: volcanic Soave Classico for its white wines and the limestone-rich Colli Berici for its reds.

Inama’s strength lies in treating Garganega as a serious terroir grape. The wines are not built around obvious fruit or heavy winemaking. Instead, they emphasise volcanic soils, freshness, texture and savoury detail. Carbonare is one of the clearest expressions of that philosophy, offering customers a refined, site-specific white with the structure and mineral character to stand comfortably alongside far more famous Italian appellations.

The 2023 Carbonare is made from 100% Garganega from the Carbonare vineyard in Soave Classico. The site lies halfway up the hillside with an easterly exposure, planted on deeply coloured volcanic basalt. Cooling air flows down from the Val d’Alpone and the Piccole Dolomiti, helping preserve the vineyard’s naturally bright acidity and mineral character.

After a short period of skin contact, fermentation takes place in stainless steel. The wine then spends 12 months ageing in stainless steel on its fine lees, followed by a further 6 months in bottle before release. There is no oak and no bâtonnage, keeping the focus firmly on the vineyard, acidity and volcanic character. The wine is listed as vegan and conventionally farmed rather than certified organic.

The result is a Soave Classico with citrus, green melon, herbs and a fine stony edge, carried by brisk acidity and a long saline finish. The stainless-steel ageing keeps it transparent and precise, while the extended lees and bottle ageing add enough texture to give it serious presence. It is excellent to drink now with seafood or vegetables, but the acidity and mineral structure give it clear potential to develop further.
