White peach, ripe pear and citrus meet spring flowers, oyster shell and a cool chalky note, with a subtle touch of spice adding complexity. The amphitheatre-shaped vineyard captures the sun, giving the wine ripeness and perfume, while the clay-rich soils keep the palate broad, supple and distinctly saline.

On the palate, it is silky and finely balanced, with ripe white fruit, fresh acidity and a long, mineral finish. Partial ageing in French oak adds breadth without covering the vineyard’s character, while extended maturation brings calm and precision. This is a serious buy for customers who want Grand Cru Chablis with finesse, charm and enough structure to reward careful cellaring.

Vaudésir sits between Valmur and Les Preuses in the heart of the Chablis Grand Cru slope. Its natural amphitheatre, steep gradients and warmer south-facing exposures give wines that are often more floral and immediately charming than some neighbouring climats, while still carrying the mineral tension expected of Grand Cru Chablis. Domaine William Fèvre is one of the benchmark estates of Chablis, with family winegrowing roots stretching back for generations. William Fèvre took over the domaine in 1959 and steadily assembled one of the appellation’s most important collections of Premier Cru and Grand Cru vineyards.

Today, the estate controls exceptional holdings across the Chablis hierarchy, with Didier Séguier playing a central role in shaping its modern style. The wines are built around precision rather than showiness, with gentle gravity handling, restrained use of oak and long élevage allowing individual climats to remain clearly identifiable.

Environmental work is equally important. Organic farming has been employed across much of the domaine for years, while biodynamic methods have also been used throughout Premier and Grand Cru parcels. Since 2024, Domaine William Fèvre has been part of Domaines Barons de Rothschild Lafite.

For customers, Vaudésir represents the more elegant, floral side of the Grand Cru range. It combines ripeness and supple texture with salinity, finesse and the freshness that makes top Chablis so distinctive.

The 2023 Vaudésir is made from 100% Chardonnay. Domaine William Fèvre owns 1.20 hectares, around 8% of the 15.4-hectare Grand Cru. The climat is shaped like an amphitheatre between Valmur and Les Preuses, with different exposures across the slope. Fèvre’s parcel is entirely south facing on very steep terrain, with soils that contain more clay than limestone.

The site ripens early, so picking at the right moment is essential to retain freshness. The 2023 season began with a mild, dry winter and relatively little spring frost damage. A hot May was followed by June storms, while summer warmth and rain accelerated ripening. An early September harvest brought healthy fruit in generous quantities.

The grapes are handled gently by gravity without pumping, followed by pneumatic pressing for around 1.5 to 2 hours and light static settling. Fermentation takes place in temperature-controlled stainless-steel vats. The wine then ages for 19 months, with 35% spending five to six months in French oak barrels before maturation is completed in small stainless-steel tanks. Alcohol is 13%, residual sugar is zero, and the wine is bottled under DIAM.

The result is a Grand Cru with ripe pear, citrus and white flowers wrapped around fine mineral tension and a long saline finish. The oak adds texture rather than overt flavour, keeping the site’s perfume and freshness clear. It is already appealing with rich seafood, but the balance, concentration and acidity give it excellent potential to develop further in bottle.
