Domaine William Fèvre is one of the defining estates of Chablis, with family winegrowing roots stretching back for generations. William Fèvre took control of the domaine in 1959 and steadily expanded its holdings across some of the appellation’s most important Premier Cru and Grand Cru sites.

Today, the estate owns one of the strongest vineyard portfolios in Chablis. Didier Séguier has played a central role in shaping the modern style, favouring gentle gravity handling, restrained oak and long élevage so that each climat remains clearly identifiable in the glass.

Environmental work has become equally important. Organic farming practices have been developed extensively across the estate, while biodynamic methods have also been used in Premier and Grand Cru parcels. Since 2024, Domaine William Fèvre has been part of Domaines Barons de Rothschild Lafite.

For customers, Valmur represents a particularly compelling part of the range. It combines Grand Cru scale and concentration with a cool, mineral edge, making it a bottle for both serious Burgundy collectors and anyone looking to experience Chablis at its most profound.

The 2023 Valmur is made from 100% Chardonnay. Domaine William Fèvre owns 1.15 hectares, around 9% of the entire 10.5-hectare Grand Cru. The parcel sits high on the crest of the hill with a south to south-easterly exposure, benefiting from a cooler microclimate. The soils move from deeper brown clay-limestone lower down to leaner white soils and marl outcrops towards the summit.

The 2023 season began with a mild, dry winter and relatively little damage from April frost. A hot May was followed by June storms, while summer warmth and rainfall accelerated ripening. Drier conditions in August slowed véraison slightly before an early September harvest delivered generous quantities of healthy fruit.

The grapes are handled gently by gravity without pumping, followed by pneumatic pressing for around 1.5 to 2 hours and light static settling. Fermentation takes place in temperature-controlled stainless-steel vats. The wine then ages for 18 months, with 40% spending five to six months in French oak barrels before maturation is completed in small stainless-steel tanks. Alcohol is 13.5%, residual sugar is zero, and the wine is bottled under DIAM.

The result is a Grand Cru with real depth and tension. Pear, lime and white flowers lead into oyster shell, crystallised ginger and chalky minerality, while the oak adds breadth rather than flavour. It is still youthful and will reward further bottle age, but with air it already shows impressive balance. For customers looking to cellar it, the combination of concentration, acidity and salinity gives it a very strong future.
