2023 Chablis 1er Cru La Forest, Vincent Dauvissat

Chablis, Burgundy, France

“King of the Limestone”

This is La Forest in full voice, steely, saline and impossibly precise. The 2023 opens with oyster shell, lemon zest and dried white flowers, layered with iodine, chalk dust and cool orchard fruit. There is an immediate sense of seriousness here, the sort of quiet authority that only the best Chablis sites seem to carry. Critics have already singled it out as one of the finest wines of the vintage, with Wine Advocate going as far as to call Dauvissat “the king of La Forest.”

On the palate, it is tensile and electric. Lemon oil, white peach and citrus peel sweep across the glass, but beneath the fruit is that unmistakable La Forest signature, chalky extract, stony tension and a searing saline line that drives the wine long and true. There is texture and breadth, but never heaviness. Instead, it builds in waves, finishing smoky, mineral and incredibly persistent. This is Chablis with both power and purity, already captivating, but clearly built for the long haul.

For when you want white Burgundy with cut, class and total conviction.
Pairs with oysters, turbot, scallops in beurre blanc or a table that understands what top Chablis can do.
If this wine were a landscape, it would be white cliffs above a cold sea, stark, beautiful and unforgettable.

Producer
Vincent Dauvissat is one of Chablis’ great benchmark domaines, producing wines of restraint, longevity and deep mineral clarity. La Forest is widely considered one of his defining Premier Crus, often mentioned in the same breath as Montée de Tonnerre as one of the estate’s finest sites.

Domaine Vincent Dauvissat is one of the great reference points of Chablis, a producer whose reputation rests not on fashion or volume, but on quiet consistency, old vines and an almost instinctive understanding of place. The family has been rooted in Chablis for generations, and today the domaine is regarded as one of the region’s true benchmarks, producing wines that capture the essence of Kimmeridgian limestone with remarkable clarity and longevity. Whether from Petit Chablis, village sites or the grandest crus, there is a signature here, restraint, precision and a deep mineral calm.

In the vineyard, the approach is thoughtful and exacting, with an emphasis on low yields, healthy fruit and respect for the natural balance of each site. In the cellar, winemaking is traditional and understated. Fermentation and élevage take place largely in older oak, used not to flavour the wine, but to give it shape, texture and the ability to age gracefully. The result is Chablis that never feels forced or overly polished, wines that begin life taut and saline, then unfurl over time into something layered, savoury and hauntingly complex.

What makes Dauvissat so admired is this sense of understatement. These are not wines built to impress in the loudest way, but to endure, evolve and reveal themselves slowly. They have become some of the most sought-after bottles in Chablis because they offer something increasingly rare, authenticity without compromise. Even the domaine’s Petit Chablis carries that same philosophy, delivering a purer, more immediate glimpse into one of Burgundy’s most revered addresses.
