Bright, floral and finely mineral, this 2023 Beauroy captures the generous side of Premier Cru Chablis while keeping plenty of tension. Lime peel, green apple and pear sit alongside white flowers, oyster shell and a subtle smoky note, with the old vines of Troësmes giving the wine extra depth beneath its fresh citrus character.

On the palate, it is lively yet rounded, with orchard fruit, chalky texture and a long, lightly saline finish. A small proportion of French oak brings gentle breadth without masking the vineyard, while extended ageing gives the wine polish and composure. This is a strong buy for customers who want Premier Cru Chablis with freshness, mineral character and enough richness to work beautifully at the table.

Beauroy is one of the key Premier Cru sites on the left bank of the Serein. William Fèvre’s parcel lies within Troësmes, an especially well-exposed section of the climat planted with mature vines. The combination of sunny exposure and classic Chablis clay-limestone soils gives the wine both ripeness and mineral precision, making it a particularly attractive step up from village Chablis.

Domaine William Fèvre is one of the benchmark names of Chablis, with family winegrowing roots in the region stretching back more than two centuries. William Fèvre took control of the estate in 1959 and steadily expanded its holdings across many of the appellation’s finest Premier Cru and Grand Cru sites.

The domaine is known for a style centred on purity, mineral definition and restrained winemaking. Didier Séguier has been instrumental in shaping that modern identity, favouring gravity handling, gentle pressing, limited use of older oak and long élevage so that individual vineyards remain clearly recognisable.

Environmental work has become equally important. Organic practices have been used extensively across the estate, alongside biodynamic viticulture in Premier and Grand Cru parcels. Since 2024, Domaine William Fèvre has been part of Domaines Barons de Rothschild Lafite.

For customers, Beauroy offers an excellent entry into the domaine’s Premier Cru range. It has more depth and texture than village Chablis while keeping the citrus freshness, salinity and mineral precision that make William Fèvre such a trusted name.

The 2023 Beauroy is made from 100% Chardonnay. Domaine William Fèvre farms 1.12 hectares within the Troësmes sector of Beauroy, with old vines aged around 55 to 60 years. The parcel has a south to south-easterly exposure and classic clay-limestone soils, helping the grapes achieve ripeness while retaining strong mineral freshness.

The 2023 season began with a mild, dry winter and relatively little frost damage. A hot May was followed by June storms, while summer warmth and rainfall accelerated ripening. Dry weather in August slowed véraison slightly before an early September harvest delivered generous volumes of healthy fruit.

The grapes are handled gently by gravity without pumping, followed by pneumatic pressing for around 1.5 to 2 hours and light static settling. Fermentation takes place in temperature-controlled stainless-steel vats. The wine ages for 18 months, with 25% of the blend spending five to six months in French oak barrels before maturation is completed in small stainless-steel tanks. Alcohol is 13.5%, residual sugar is zero, and the wine is bottled under DIAM.

The result is a Premier Cru with citrus, green apple, flowers and chalky mineral freshness wrapped around a slightly broader, more textural palate. The measured oak adds shape rather than flavour, while the long ageing brings polish and length. It is ready to drink now with seafood or poultry, but the acidity and mineral structure give it enough backbone to develop further.
